Dutch Baby Pancake

Directions Preheat oven to 425 degrees
- 3 tablespoons unsalted butter, room temperature 3 large eggs 3/4 cup whole milk 1/2 cup all-purpose flour, (spooned and leveled) 1/4 teaspoon salt 1/2 teaspoon pure vanilla extract 1/4 cup plus 1 tablespoon sugar 1 tablespoon fresh lemon juice

Fudgy Bourbon Balls

1. In the bowl of a food processor, pulse together the cookie crumbs and pecans until the nuts are finely ground

- Makes about 48 balls
- 2 1/2 cups chocolate cookie crumbs (best made with Nabisco Famous wafers, pulverized in a food processor)
- 1 1/4 cups pecans
- 1/2 cup good bourbon or rum
- 1 cup confectioners' sugar, plus additional for rolling
- 3 tablespoons unsweetened cocoa powder
- 1 1/2 tablespoons honey
Caramelized Onion-Stuffed Baked Potato

1. Pierce potatoes with a fork, arrange on paper towels in microwave oven
- 2 medium baking potatoes(about 1 1/2 pounds)
- 1/2 cup (2 ounces) shredded Gruyere cheese, divided)
- 2 tablespoons reduced-fat sour cream
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 1/2 teaspoons butter
- 2 cups vertically sliced red onion
- 2 teaspoons sugar
- 2 tablespoons dry sherry (optional)
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon dried thyme
- 1 garlic clove minced
Lighter Cobb Salad

Directions In a medium skillet, cook bacon over medium, turning occasionally, until crisp, 5 to 8 minutes
- 3 slices bacon
- 1 cup low-fat buttermilk
- 1/4 cup light mayonnaise
- 1 tablespoon red-wine vinegar
- 1/2 cup crumbled blue cheese (2 ounces)
- Coarse salt
- 2 heads Boston lettuce (1 pound total), torn into bite-size pieces
- 6 ounces deli turkey, cut into bite-size pieces
- 4 plum tomatoes, halved, seeded, and diced
- 4 large hard-cooked egg whites, chopped
- 1 avocado, halved, pitted, peeled, and diced
Chicken, Rice, and Black-Bean Salad

Directions Cook rice according to package instructions
- 1 cup brown (or white) rice
- 1 2 1/2 4 2 1/2 pounds), shredded (about 4 cups)
- 1 1/2 (15 1/2 ounces) black beans, drained and rinsed
- 6 plum tomatoes, quartered lengthwise, seeded, and thinly sliced
- 1 jalapeno chile (seeds and ribs removed for less heat, if desired), minced
- 1/4 cup white-wine vinegar
- 3 tablespoons olive oil
- 1/2 teaspoon ground cumin
- Coarse salt and ground pepper
- 4 scallions, thinly sliced
Baked Samosas with Mint Chutney

- Filling:
- 8 samosas, about 1/2 cup chutney Ingredients
- 1 large russet potato
- Water
- Salt
- 2 bay leaves
- 1 1/2 teaspoons coriander seeds
- 1/2 teaspoon black peppercorns
- 1/2 teaspoon red chili flakes
- 3 ounces boneless, skinless chicken breast
- 1 mango, peeled, pitted and finely diced
- Juice of 1/2 lime
- 5 tablespoons chipotle sauce
- 1/2 teaspoon cumin seeds
- Big handful cilantro leaves, minced
- Salt and freshly ground black pepper
- Samosas:
- 2 packages puff pastry, thawed
- 1 egg
- 1 teaspoon water
- Mint Chutney:
- 1 cup mint leaves
- 1/2 cup cilantro leaves and soft stems
- 1 tablespoon fresh ginger, chopped
- 1/2 lime, juiced, plus more to taste
- 1/4 About 1/4 cup water
- Salt and freshly ground black pepper
- 1 tablespoon vegetable oil or olive oil
- 1 teaspoon brown mustard seeds
Indian Cucumber and Yogurt Salad: Cucumber Raita

Watermelon - Berry Lemonade

- 8 cups seedless watermelon
- 3 cups hulled and quartered strawberries
- 2 12 ounce cans frozen lemonade
- 8 cups water
"Instant" Pancake Mix

Combine all of the ingredients in a lidded container
- 6 cups all-purpose flour
- 1 1/2 teaspoons baking soda (check expiration date first)
- 3 teaspoons baking powder
- 1 tablespoon kosher salt
- 2 tablespoons sugar
- 2 eggs, separated
- 2 cups buttermilk
- 4 tablespoons melted butter
- 2 cups "Instant" Pancake Mix, recipe above
- 1 stick butter, for greasing the pan
- 2 cups fresh fruit such as blueberries, if desired
