Slow Cooker Carne Asada

Cut skirt steak in half or in thirds so it can fit into slow cooker
- 2 pounds skirt steak
- 1 lime, juiced
- 2 teaspoons cumin
- 1 teaspoon paprika
- 7 cloves garlic, minced
- 1/4 cup fresh cilantro, rough chopped
- 2 teaspoons Mexican oregano, dried
- 1 1/2 teaspoons salt
- 1/2 teaspoon pepper
Hearty Minestrone Soup

Dissolve 1 1/2 tbsp salt in 2 qts
- table salt
- 1 1 1⁄2 1 lb dried cannellini beans, rinsed and picked over (about 1 cup)
- 1 1 1 tablespoon extra virgin olive oil
- 3 3 1/4-inch ounces pancetta, cut into 1/4-inch pieces
- 2 2 1/4-inch medium celery ribs, cut into 1/4-inch pieces
- 1 1 1/2-inch medium carrot, peeled and cut into 1/2-inch pieces
- 2 2 1/2-inch small onions, peeled and cut into 1/2-inch pieces
- 1 1 1/2-inch medium zucchini, trimmed and cut into 1/2-inch pieces
- 2 2 2 medium garlic cloves, minced
- 1 1 1/2-inch ⁄2 small head green cabbage, halved, cored, and cut into 1/2-inch pieces
- 1 1 1 ⁄8 teaspoon red pepper flakes
- 8 8 8 cups water
- 2 2 2 cups low sodium chicken broth
- 1 1 5-inchx2-inch) piece parmesan cheese, rind (about 5-inchx2-inch)
- 1 1 1 bay leaf
- 1 1 1⁄2 1⁄2 cups V8 juice
- 1 1 1 ⁄2 cup chopped fresh basil leaf
- fresh ground black pepper
- grated parmesan cheese, for serving

- 3 tablespoons shaoxing wine, divided
- 1 lb broccoli floret, cut into bite sized pieces
- 2 tablespoons cooking oil (I use canola, vegetable is fine too)
- 1/4 teaspoon sesame oil
- 2 garlic cloves, minced
- 1 teaspoon ginger, very finely minced
- 2 tablespoons oyster sauce
- 2 tablespoons water
- 1 tablespoon brown sugar
- 1 tablespoon soy sauce

- 1 pound boneless skinless chicken breasts , cut into thin bite sized slices
- 3 tablespoons cornstarch
- 1 tablespoon canola oil
- 1 tablespoon sesame oil
- 8 ounces crimini mushrooms , sliced (white mushrooms are authentic to the recipe, but I love crimini)
- 1 medium zucchini , cut in half lengthwise, then in 1/2 inch slices
- 1/4 cup soy sauce
- 1 tablespoon rice wine vinegar
- 2 teaspoons sugar
- 3 garlic cloves , minced
- 2 teaspoons minced ginger (or 1/2 teaspoon ground ginger)
