CrockPot Chicken Nuggets

Use 6 chicken breast halves, and layered cut up pieces in 6 quart CrockPot
- 4 to 6 boneless, skinless chicken breast halves
- 4 T butter or olive oil (I used butter)
- 4 eggs
- 1 cup breadcrumbs, or a mixture of cracker, cereal, tortilla chip, etc. crumbs.
- 1/2 teaspoon seasoned salt
- 1/2 teaspoon garlic powder
- 1 T flax seed meal (optional---I threw it in. They'll never know.)

- 1 tablespoon olive or vegetable oil
- 1 teaspoon Italian seasoning
- 1/4 teaspoon seasoned salt
- 1 clove garlic, finely chopped (about 1/2 teaspoon)
- 2 medium dark-orange sweet potatoes (about 1 lb), peeled, cut into 1-inch chunks
- 1 medium yellow onion, cut into 8 wedges each
- Pork:
- 1 pork tenderloins (about 1 lb)
- 1/2 tablespoon olive or vegetable oil
- 1 teaspoon Italian seasoning
- 1/4 teaspoon seasoned salt
- 1 tablespoon grated Parmesan cheese
- 1 tablespoon chopped fresh parsley, if desired
Beef and Scallion Stir-Fry

Place scallion pieces in a large bowl
- 1 1/2 bunches scallions, cut into 2-inch pieces
- 1 pound top round steak (see Note)
- 3 tablespoons cornstarch, divided
- 3 tablespoons lite soy sauce

In a large pot, combine the milk, rice, egg yolks, and sugar
- 8 cups (1/2 gallon) milk
- 1 cup uncooked long- or whole-grain rice
- 3 egg yolks, beaten
- 3/4 cup sugar
- 1/2 teaspoon vanilla extract
Slow Cooker Lasagna Soup

In a large slow cooker, combine all ingredients except pasta and cheeses
- 1 pound Italian sausage links, cut into bite-sized pieces
- 2 large onions, diced
- 5 garlic cloves, minced
- 1 tablespoon dried oregano
- 1/4 teaspoon red pepper flakes
- 1-6 ounce can tomato paste
- 1-28 ounce can fire-roasted tomatoes
- 2 bay leaves
- 6 cups chicken broth
- Salt and pepper, to taste
- 10 ounces curly pasta (fusilli)
- Ricotta and mozzarella cheeses for topping

Old-Time Blackberry Cobbler

Heat oven to 450 degrees. Roll out about 1/3 of the dough and trim it to make a 9 inch square
- Pastry for a 9-inch Double-Crust Pie
- 1 Cup Sugar
- 2 tbsp all-purpose flour
- 2 tsp vanilla extract
- 6 cups fresh blackberries (about 1 1/2 pounds)
- 2 tbsp cold butter, chopped into small pieces
Secret Ingredient Four Cheese Lasagna
