Lemon Dream Cake

Bake cake in any form you wish (I make 2 9" layers)
- 1 package lemon cake mix (pudding in the mix is richer)
- 2 (8-ounce) containers lemon yogurt (blended type if possible)
- 1 (8-ounce) container of Cool Whip (thawed)
Chicken BLT Salad

Microwave cheese in a small microwave-safe bowl at HIGH 20 seconds
- 1/2 cup garlic-and-herb-flavored cheese spread
- 3 cups chopped cooked chicken (about 6 breasts)
- 1/2 cup grape tomatoes, halved
- 1/3 cup chopped scallion tops
- 2 bacon slices, cooked and crumbled Salt and freshly ground black pepper to taste
- Assorted mixed greens (optional)
Korean Potato Salad

Spiralize the potatoes with the spaghetti blade of the Veggie Spiralizer
- 6 6 6 small red potatoes
- 1/2 1/2 1/2 seedless cucumber
- 1/2 1/2 1/2 cup (75 mL) low-fat mayonnaise
- 1 1 1 tbsp (15 mL) rice wine vinegar
- 1 1 1 tbsp (15 mL) honey
- 1/2 1/2 1/2 tsp (2 mL) salt
- 1 1 1 green onion, chopped
Pig Cake

Preheat oven to 350 degrees
- FOR CAKE:
- 1 box (18.25 Oz. Box) Yellow Cake Mix
- 1 stick Margarine (softened)
- 1 can (14 Oz. Can) Mandarin Oranges, Drained, 1/2 Cup Juice Reserved
- 4 whole Eggs
- 1 teaspoon Vanilla Extract
- FOR TOPPING:
- 1 package (4 Oz. Box) Vanilla Instant Pudding Mix
- 1 can (20 Oz. Can) Crushed Pineapple, Juice Reserved
- 1/2 cups Powdered Sugar
- 4 ounces, fluid Frozen Whipped Topping (such As Cool Whip)
- Extra Mandarin Orange Slices, For Garnish
Layered Spaghetti Casserole

Cook pasta according to package directions; drain
- 8 ounces uncooked spaghetti
- 1 pound ground chuck
- 1 small onion, chopped
- 1 (26 ounce) jar pasta sauce with mushrooms
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 1 (12 ounce) can evaporated milk
- 1/2 cup grated Parmesan cheese
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 cups (8 ounces) shredded sharp Cheddar cheese, divided
Dad's Baked Beans

In an ungreased 2-qt. baking dish, combine all ingredients
- 3 cans (15-1/2 ounces each) great northern beans, rinsed and drained
- 5 hot dogs, sliced
- 1-1/2 cups ketchup
- 1/2 cup packed brown sugar
- 2 tablespoons molasses
- 1 medium onion, chopped
- 1/2 teaspoon ground mustard
- 1/4 teaspoon salt
- 1/4 teaspoon pepper

- 1/4 cup vegetable oil
- 1 pound hot or sweet Italian sausage, cut into quarters
- 3 medium to large green or red bell peppers, cleaned, then sliced into 1/2-inch strips
- 1 large onion, cut into 1/4-inch slices
- 4 hoagie or submarine rolls, split open
Slow Cooker BBQ Short Ribs

In a small bowl, mix sea salt, pepper, and garlic and onion powders
- Fine sea salt
- Ground black pepper, to taste
- Granulated garlic powder, to taste
- Onion powder, to taste
- 5 lbs beef short ribs
- 1 large onion, coarsely chopped
- 2 cups of barbecue sauce of your choice
- 2 tablespoons of honey
- 1 tablespoon Dijon mustard
- 1/2 can or bottle of Beer
