Spinach-Noodle Kugel

Cook and drain noodles. Thaw out and drain spinach
- 1 pound medium noodles
- 1/2 pound margarine or butter
- 4 eggs
- 2 cups Coffee Rich or light cream
- 2 packages onion soup mix
- 2 packages frozen spinach
Potato Pancakes (Weight Watchers)

- 1 1/4 pounds baking potatoes,*
- peeled and shredded
- 2 egg whites
- 3 tablespoons all-purpose flour
- 2 scallion, minced
- 3/4 teaspoon salt
- 4 teaspoons vegetable oil
- *In this recipe, it's critical to use starchy baking potatoes like russet Burbanks or Idahos. Waxy, or boiling, potatoes brown and burn to easily.
Pumpkin Bread

Cream sugar, eggs and oil
- 3 cups sugar
- 1 cup oil
- 4 eggs
- 2 cups canned pumpkin
- 3 1/3 cups flour
- 1/2 teaspoon baking powder
- 1 teaspoon cinnamon
- 1 1/2 teaspoons salt
- 1 teaspoon nutmeg
- 2 teaspoons baking soda
- 2/3 cup water
- 1 cup nuts (optional)
- 1 cup raisins (optional)
Tuna Casserole

- 12 ounces water-packed canned tuna,
- drained.
- 1 (10.5 ounce) can low-sodium cream of
- mushroom soup.
- 1 cup diced onions
- 1 cup shredded Swiss cheese
- salt and freshly ground pepper
- 1 1/2 cups cooked brown rice
- 2 tablespoons canola oil
Spinach Pie

- 1 box (thawed) chopped spinach
- 1/2 lb. mushrooms
- 2 tablespoons chopped onion
- 2 eggs beaten
- 2 tablespoons flour
- 1/2 cup milk
- 1/2 cup mayonnaise
- 1 cup grated cheese
- nutmeg (to season)
- garlic salt (to season)

Honey-Ginger Crusted Chicken

- 4 small skinless, boneless, chicken
- breast halved (12 ounces total)
- NON SPRAY COATING
- 1 tablespoon honey
- 1 tablespoon orange juice
- 1/4 teaspoon ground ginger
- 1/4 teaspoon black pepper
- --- dash ground red pepper ( optional)
- 3/4 cup cornflakes, crushed (about 1/3
- cup.)
- 1/2 teaspoon dried parsley flakes
Saffron-Tinted Pasta Salad With Tuna & Fresh Herbs

Place a large pot of cold water over high heat and bring to a boil; add salt
- 1 pound paccheri (or other short
- pasta such as penne)
- SEA SALT
- 1 can (6 to 7 ounces) good quality
- tuna in olive oil, drained
- 3/4 to 1 3/4 to 1 cup finely chopped mixed fresh
- herbs such as basil, flat leaf
- parsley, and mint
- 6 to 8 6 to 8 ounces fresh mozzarella, cut
- into small cubes
- 1 medium carrot, peeled, cut cross-
- wise into short lengths, then
- lengthwise into small matchsticks
- 1/4 cup black and/or green
- Mediterranean olives, pitted and
- slivered
- 1 heaping tablespoon salt-cured
- capers, soaked in water for a few
- minutes and drain

- inch-thick pieces.
- 3 cloves garlic, mminced
- 1/3 cup dry sherry (optional)
- 3 14 1/2-ounce cans reduced-sodium
- chicken broth.
- 1 tablespoon snipped fresh thyme
- fresh thyme sprigs (optional)
Creamy Risotto with Spring Vegetables
