Tuna Casserole

Ingredients

  • 12 ounces water-packed canned tuna,
  • drained.
  • 1 (10.5 ounce) can low-sodium cream of
  • mushroom soup.
  • 1 cup diced onions
  • 1 cup shredded Swiss cheese
  • salt and freshly ground pepper
  • 1 1/2 cups cooked brown rice
  • 2 tablespoons canola oil

Preparation

Step 1

1. set oven to 375 degrees

2. In a bowl, flake the tuna with a fork.
Fold in half of the mushroom soup, the
onion, and 2 tablespoons of cheese. Add
salt and pepper to taste.

3. Microwave the rice as directed on label
or for 90 seconds on high. In a
casserole, mix rice with the oil, salt
and pepper to taste and spread in
casserole. Top with tuna mixture. Cover
with remaining soup. Sprinkle with
remaining cheese. Bake 20 minutes.

4. Place under boiler to brown top, about
1 minute.
