Sizzling Chicken Fajitas

- For the chicken
- 1 1/2 pounds boneless, skinless chicken thighs (though, frankly, a little more or less will be fine here)
- 2 tablespoons lime juice (half a juicy lime)
- 1 1/2 teaspoons kosher salt
- 1 1/2 teaspoons dried oregano
- 2 teaspoons ground cumin
- 1 garlic clove, minced or pressed
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- Few dashes hot sauce, optional
- To assemble
- 8 (6-inch) flour or corn tortillas
- Olive oil
- 2 large bell peppers, cut into thin strips (I use a mix of green, red and other colors, if I can find them)
- 1 large yellow or sweet onion, halved and sliced thin
- Coarse salt
- Fixings (pick your favorites)
- 1 1/2 cup cooked black beans (1 15-ounce can, drained and rinsed)
- Salsa or pico de gallo
- Sliced avocado or guacamole
- Shredded cheese or sour cream
- Minced white onion or pickled red onions

- 1/4 teaspoon hot red-pepper flakes
- Freshly ground black pepper

Apple Latkes

- 1 pound tart, firm apples such as Granny Smiths (2 large or 3 medium)
- 1 tablespoon lemon juice
- 6 tablespoons all-purpose flour
- 1 tablespoon granulated sugar
- 1/4 teaspoon cinnamon

- Butter (I used about 2 tablespoons)

Bucatini con Salsicce

This recipe makes a wonderful tomato-and-sausage sauce for pasta
- 1 1/2 pounds sweet Italian sausage (preferably w/out fennel seeds)
- 1 cup white wine
- 3/4 cup whole Tuscan-style pickled peperoncini, drained (about 24 small peppers)
- 3 T extra-virgin olive oil, plus more for serving
- 6 plump garlic cloves, peeled and sliced
- 1 t kosher salt
- 6 cups (2 28oz cans) canned Italian plum tomatoes, preferably San Marzano, crushed by hand
- 1 pound bucatini
- 1/2 cup freshly grated pecorino cheese (or half pecorino and half Grana Padano or Parmigiano-Reggiano), plus more for passing
- Equipment: A heavy bottomed, high-sided skillet or saute pan, 14" diameter; a large pot for cooking pasta
