Berry Lemonade

- 1 (12-ounce) bag unsweetened frozen mixed berries, thawed
- 1 (12-ounce) can frozen lemonade concentrate, thawed
- 1 cup vanilla simple syrup, recipe follows
- 3 cups water

- 1 tablespoon olive oil
- 2 medium-size red onions, chopped
- 1 medium-size red bell pepper, chopped
- 1 medium-size green bell pepper, chopped
- 4 garlic cloves, minced
- 4 teaspoons ground cumin
- 1 16-ounce package dried black beans
- 1 tablespoon chopped chipotle chiles from a can (this gives it a solid kick, dial back if you are wary)
- 7 cups hot water (I just used very hot tap water)
- 2 tablespoons fresh lime juice
- 2 teaspoons coarse kosher salt
- 1/4 teaspoon ground black pepper

- 1/2 pound ramps (you can use young leeks if you don't have access to ramps), cleaned and trimmed of roots

- 6 tablespoons (3/4 stick) unsalted butter, melted
- 1 (12-ounce) container fresh whole milk ricotta, drained
- 2 (8-ounce) packages cream cheese, room temperature
- 3/4 cup sugar
- 1/4 cup orange blossom or clover honey
- 1 tablespoon orange zest
- 4 large eggs
Tex-Mex Skirt Steak

Combine the chili powder, cumin, garlic, salt, oregano, cayenne, and oil
- 1/2 tsp. chili powder
- 1-1/2 tsp. cumin seeds, toasted and ground
- 1-1/2 tsp. minced garlic
- 3/4 tsp. kosher salt
- 1-1/2 tsp. chopped fresh oregano (optional)

- 1 Tbs. vegetable oil; more for the pan
- 1 lb. skirt steak, trimmed and cut into four portions
