- 4 bone in center cut pork chops
- 4 slices of smoked mozzarella

- 1/2 cup chicken stock
- 1/4 cup white wine
Dark chocolate rum truffles

Combine the semisweet chocolate, butter, and heavy whipping cream in a 2-quart saucepan
- 6 ounces semisweet chocolate, coarsely chopped
- 1/4 cup butter
- 3 tablespoons heavy whipping cream
- 1 beaten egg yolk
- 3 teaspoons white rum (I used Blue Chair Bay)
- 1 pound Wilton dark chocolate-flavored candy melts
- Wilton edible silver stars
Indian-Style Lamb Shanks

In a small bowl, combine garam masala, sugar, salt, and pepper
- 2 teaspoons garam masala
- 1 teaspoon sugar
- 3/4 teaspoon salt
- 1/2 teaspoon pepper
- 4 1-pound lamb shanks
- 1 tablespoon vegetable oil
- 1 cup canned crushed tomatoes
- 1/2 cup mango chutney
- 1/2 cup water
- 4 cloves garlic, thinly sliced
BOURBON-BROWN SUGAR SAUCE

Whisk brown sugar and heavy cream in small saucepan set over medium heat until combined
- 1/2 cup packed (3 1/2 ounces) light brown sugar
- 7 tablespoons heavy cream
- 2 1/4 tablespoons unsalted butter
- 1 1/2 tablespoons bourbon (see note)

Cut each steak crosswise into three pieces
- Seasoning:
- 1 1/2 pounds strip sirloin steak
- 2 tablespoons oil
- 2 tablespoons finely chopped garlic
- 2 green onions, slivered
- 2 fresh red chili peppers ( or 1/2 teaspoon dried red pepper flakes)
- 1 teaspoon salt
- 2 teaspoons sugar
- 2 teaspoons thin soy sauce
- 1 tablespoon oyster sauce
- dash of pepper
- 1 tablespoon white wine (or dry sherry)
- 1 1/2 tablespoons cornstarch
- Sauce:
- 1/4 cup chicken stock
- 2 tablespoons hoisin sauce
- 2 teaspoons catsup

In a saucepan, combine the cream, milk, sugar, and salt
- 1 1/2 cups heavy cream
- 2 cups whole milk
- 1/4 cup (50 grams) granulated sugar
- 1/2 cup (43 grams) Ghirardelli unsweetened cocoa powder
- 1/8 teaspoon salt
- 5 Ghirardelli Peppermint Bark SQUARES, chopped

1. In a glass measuring cup, combine 1 cup warm water, the milk, yeast, and sugar
- 3 tablespoons warm milk
- 2 teaspoons active dry yeast
- 2 1/2 tablespoons sugar
- 2 large eggs
- 3 cups bread flour
- 1/3 cup all-purpose flour
- 1 1/2 teaspoons salt
- 2 1/2 tablespoons unsalted butter cut into small cubes, softened
Southwestern Slaw

- 2 * 2 cups fine-shredded green cabbage
- 2 * 2 tsp lime juice
- 2 * 2 tsp honey
- 2 * 2 tbsp minced red onion
- 2 * 2 tsp minced jalapeños
