Black Bean and Sweet Potato Chili

Heat oil in large Dutch oven or heavy-lidded saucepan over medium heat
- 1 tablespoon olive oil
- 1 medium yellow onion, diced
- 1 orange pepper, diced
- 1 red pepper, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 2 teaspoons chili powder
- One 15-ounce can diced tomatoes
- Three 15-ounce cans black beans, rinsed and drained
- 1 small chipotle chile pepper in adobo sauce, minced
- 1/4 cup chopped cilantro stems
- Kosher salt
- 1 bottle dark beer
- 1 pound sweet potatoes, peeled and cut into 1-inch cubes
- 1/4 cup chopped cilantro leaves
- 1/2 lime (optional)

Braised BBQ Beef Sandwich Recipe

1 In a large, heavy pot, heat olive oil on medium heat
- One * One 3-pound chuck roast, rinsed and dried
- 2 * 2 medium onions, chopped
- 1 * 1 Tbsp olive oil
- 1 * 1 28-ounce can whole tomatoes (preferably plum tomatoes)
- 1 * 1 18-ounce bottle of your favorite barbecue sauce (or 2 1/4 cups of your favorite homemade barbecue sauce)
- * Salt and freshly ground black pepper
- 12 * 12 sandwich or hamburger buns
Beef Stroganoff

1. Heat a heavy skillet over medium high heat until hot
- 1 * 1 lb top sirloin, trimmed of fat and sliced into thin strips
- 6 * 6 tbsp butter, divided
- 8 * 8 oz mushroom, sliced
- 1/2 * 1/2 onion, diced
- 2 * 2 cloves garlic, minced
- 1/4 * 1/4 cup dry white wine (optional, can use brandy, Marsala, etc)
- 1 * 1 cup beef broth
- 1 * 1 cup sour cream
- 1 * 1 tbsp flour (if needed)
- 1 * 1 tbsp flat leaf parsley, chopped
- * salt and pepper
- 12 * 12 oz extra wide egg noodles, cooked
Chicken braised with wine, cream and thyme

1. Wash the chicken, then pat dry with paper towel
- 2 large chicken marylands, bone attached
- 1 tbls p olive oil
- 1 carrot, cut into 4cm lengths, quartered
- 5 eschalots, halved and peeled
- 1/2 small bunch thyme
- 1 garlic clove, crushed
- 1/2 cup white wine
- 1/2 cup cream
- 1 tblsp plain flour
- 10 g unsalted butter, softened
Summer Zucchini Bites

Pre-heat oven to 400 F. Coat mini-muffin pan with butter
- 1 Tbsp butter, for greasing pans
- 2 large eggs
- 2 cups grated zucchini (1 medium to large zucchini)
- 1/2 yellow onion, finely chopped
- 1/2 cup coarsely grated cheddar cheese (2 ounces)
- 1/2 cup plain breadcrumbs
- 1/2 cup finely chopped fresh parsley
- 1/2 tsp kosher salt

- 1 tablespoon butter
- 1 tablespoon all purpose flour
- 1 cup whipping cream
- 1/4 cup dry white wine
- 1/4 cup canned low-salt chicken broth
- 1 cup crumbled Gorgonzola cheese (about 4 ounces)

Chopped Kale Salad with Edamame, Carrot and Avocado

Use a chef's knife to remove the tough ribs from the kale, then discard them
- Salad
- 1 bunch kale (preferably lacinato/Tuscan/dinosaur kale but regular curly kale works, too)
- fine-grain sea salt
- 1 cup chopped snow peas (slice off tough ends first)
- 1 large carrot, peeled and ribboned with a vegetable peeler
- 1 small red bell pepper, deseeded and chopped
- 1 heaping cup organic edamame (if using frozen edamame, defrost by tossing into a pot of boiling water for 3 to 4 minutes)
- 1 avocado, pitted and sliced into small chunks
- 1 large shallot, finely sliced
- handful cilantro, chopped
- handful Thai basil (or regular basil), chopped
- Tamari-Ginger Vinaigrette
- 1/4 cup olive oil
- 2 tablespoons rice vinegar
- 1 tablespoon finely grated ginger
- 1 tablespoon low-sodium tamari (or other low-sodium soy sauce*)
- 2 teaspoons lime juice
- 3 garlic cloves, pressed or minced
Shredded Beef Tacos

Heat a large, heavy bottomed skillet over medium high heat, and add the oil
- 1 (2 lb.) boneless beef roast (I used one that was a little over 1 lb.)
- 1 Tbsp. canola oil
- 1 onion, sliced
- 4 cloves garlic, minced
- 1/2 Tbsp. tomato paste
- 3/4 cup beef broth
- 1/2 tsp. parsley
- 2 tsp. chili powder
- 1.5 tsp. cumin
- 1/2 tsp. cayenne
