Creamy Chicken Pasta with Mushrooms and Spinach

Generously season chicken with salt and pepper
- 1 boneless, skinless chicken cutlet
- Kosher salt and freshly ground black pepper
- 1 teaspoon olive oil
- 1 garlic clove, minced
- 1 teaspoon crushed red pepper flakes
- 5 medium button mushrooms, sliced
- 1/2 tablespoon butter
- 1 1/2 teaspoons whole-wheat flour
- 1/4 cup heavy cream
- 1/2 cup packed baby spinach leaves
- 3/4 cup dried whole-grain penne, or similar shape, cooked according to package directions and drained
Coq au Riesling

1. Melt butter in 12-inch, straight-sided sauté pan over medium high heat
- 1 * 1 tablespoon unsalted butter
- 3 * 3 thick-cut strips of bacon, cut into lardons
- 1 * 1 chicken, in 10 pieces (2 breasts, cut in half, 2 thighs, 2 drumsticks, 2 wings)
- * Sea salt
- 1/2 * 1/2 onion, medium diced
- 8 * 8 ounces cremini mushrooms, quartered
- 1 1/2 * 1 1/2 cups dry Riesling
- * Freshly cracked black pepper
- 1/4 * 1/4 cup crème fraîche
- 2 * 2 tablespoons chopped fresh flat leaf parsley
Linguine with Shrimp

Bring a large pot of water to a boil over high heat
- 2 lemons
- 1 cup heavy cream
- 1 lb. small shrimp, peeled and deveined
- 1 Tbs. minced fresh chives
- 2 Tbs. salt, plus more, to taste
- 1 lb. linguine or fettuccine
- 1 Tbs. olive oil
- Freshly ground white pepper, to taste
Hot Cocoa Cookies

Preheat oven to 350° f. and line 1-2 baking sheets with parchment paper
- 1 2/3 C. semisweet chocolate chips
- 1 C. unbleached all-purpose flour
- 1/4 C. unsweetened Dutch-process cocoa powder (Hershey's Dark cocoa powder works in a pinch)
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 C. (1 stick) unsalted butter, slightly softened
- 1/2 C. packed light brown sugar
- 1/4 C. granulated sugar
- 1 large egg
- 1 tsp. vanilla extract
- 1 Hershey's Milk Chocolate Bar (about 12 squares)
- 6 marshmallows, cut in half
- Additional chocolate for garnish, if desired
Roast Beef Po' Boys

Pat the beef dry with paper towels and season generously with salt and pepper
- For the beef filling:
- 2 to 3 pounds beef top round or chuck roast
- Kosher salt and freshly ground black pepper
- 1/2 pound thick cut bacon, diced, about 6 slices
- 1 sweet onion, chopped
- 1/2 cup dry red wine
- 3 cups low sodium beef, veal, or chicken stock, or a mix
- 5 large cloves garlic, smashed
- 2 teaspoons Worcestershire sauce

- 1 small leek, white and light green parts only, thinly sliced

In a large saucepan, combine 5 cups stock with reserved shrimp shells and mushroom trimmings
- 5 3/4 cups homemade or store-bought chicken stock, divided
- 1 pound large shrimp, shelled (shells reserved)
- 3/4 pound mixed mushrooms, such as cremini, shiitake, and oyster, stemmed and thinly sliced (stems reserved)
- 3/4 teaspoon kosher salt, plus more for seasoning
- 1/4 teaspoon baking soda
- 1/4 teaspoon cornstarch
- 1 cup grits, preferably stoneground (see note above)
- 1 cup grated Gruyère cheese (about 4 ounces)
- Freshly ground black pepper
- 4 slices thick-cut bacon (about 4 ounces), diced
- Vegetable oil (if needed)
- 1 medium shallot, minced
- 2 medium cloves garlic, minced
- 1/4 teaspoon cayenne pepper
