Crusty Italian Bread

Put 5 cups of the flour in a large bowl and mix with the yeast, sugar and salt
- 2 cups lukewarm water
- 2 1/4 tspns instant dry yeast
- 5 – 5 1/2 cups bread flour
- 1 tblspn light brown sugar
- 2 tblspns olive oil
- 2 1/2 tspns salt
Stuffed Mushrooms

1. Preheat oven to 375°. Remove and coarsely chop stems from mushrooms, reserving caps
- 18 large white mushrooms
- 3 tbsp. extra-virgin olive oil
- Salt
- 1 ⁄4 cup marsala
- 1 1⁄2 cup fresh bread crumbs
- 1 cup grated pecorino romano
- 2 tbsp. finely chopped parsley
- 1 garlic clove, minced
- Freshly ground black pepper
Maple Blueberry Balsamic salad dressing

Put all ingredients into blender and blend until creamy
- 1/2 cup fresh or frozen blueberries
- 1/4 cup olive oil
- 2 Tbsp Balsamic vinegar
- 1-2 cloves garlic
- 2 Tbsp Maple Syrup
- Salt & pepper, pinch of each
Roast Beef Po’ Boy with Debris Gravy Recipe

Cut small slits into the roast, about every 3 inches, try not to pierce all the way to the bottom
- For the Roast:
- 1 Beef Chuck Roast (this one was 2 1/2 pounds)
- 2 Garlic Cloves thinly sliced
- Kosher Salt & Black Pepper
- Cayenne
- 3 Tbsp Lard or Vegetable Oil
- 1 Small Onion, Diced
- 1 Small Carrot, Diced
- 1 Cup Beef Stock
- 1 Cup Chicken Stock
- Water if necessary
- 2 Tbsp Worcestershire Sauce
- 1 Tbsp Hot Sauce
- 2 Sprigs Fresh Thyme
- 1 Fresh Bay Leaf
- Kosher Salt and Black Pepper to taste

- 1 cup unbleached all purpose flour
- 1/2 cup semolina flour
- 1/2 tsp salt.
- Add 2 beaten eggs,
- 2 tbsp water,
- 2 tbsp olive oil

- 1/2 cup strong brewed coffee cold
- 1 (14 ounce) can sweetened condensed milk
- 2 cups heavy cream
- 1/3 cup Nutella
Thai-Style Beef With Basil and Chilies (Phat Bai Horapha)

Combine beef, 1 teaspoon soy sauce, 2 teaspoons fish sauce, and white sugar in a bowl
- 1 pound (450g) flank steak, skirt steak, hanger steak, or flap meat, cut into 1/4-inch-thick strips
- 1 tablespoon (15ml) soy sauce, divided
- 5 teaspoons (25ml) Asian fish sauce, divided
- 1 teaspoon (4g) white sugar
- 4 to 6 fresh red or green Thai bird chilies, divided
- 6 medium cloves garlic, divided
- 1 1/2 tablespoons (20g) palm sugar (see note above)
- 1 small shallot, thinly sliced
- 4 makrut lime leaves, very thinly sliced into hairs (central vein discarded), plus more for garnish (see note above)
- 2 tablespoons (30ml) vegetable or canola oil, divided
- 2 cups packed Thai purple basil (about 2 ounces; 55g)(see note above)
- Dried Thai chili flakes or red pepper flakes to taste (optional)
- 1/4 cup fried shallots (see note above)

Melt 1 tablespoon butter in heavy small saucepan over medium heat
- 1 tablespoon butter
- 1 tablespoon all purpose flour
- 1 cup whipping cream
- 1/4 cup dry white wine
- 1/4 cup canned low-salt chicken broth
- 1 cup crumbled Gorgonzola cheese (about 4 ounces)
Spaghetti with Shrimp, Broccolini and Basil

Bring a large pot of salted water to a boil
- 1 pound spaghetti or linguine
- salt
- extra-vrigin olive oil
- crushed red pepper flakes
- 3/4 pound medium shrimp, peeled with tails intact, deveined
- 1/2 pound broccolini, ends trimmed, cut in 1 inch pieces
- 1 large garlic clove, minced
- 1 - 28 ounce can Italian plum tomatoes, drained
- freshly ground black pepper
- 1/4 cup grated Parmigiano-Reggiano cheese
- 1/2 cup whole basil leaves
Pecorino-Crusted Chicken with Marinated Mushroom Salad
