Butternut Squash Risotto

In a large saucepan, heat broth and butternut squash puree over medium-high heat
- 3 cups fat free low-sodium chicken broth (use vegetable broth for vegetarian)
- 1 cup butternut squash puree
- 1 tsp butter or olive oil
- 3 cloves garlic, chopped
- 1/4 cup shallots, chopped
- 1 cup arborio rice
- 2 oz dry white wine
- 1 tbsp fresh sage, minced
- 1/4 cup freshly grated Parmigiano-Reggiano
- salt and fresh cracked pepper, to taste
- 2 cups fresh baby arugula, for garnish

Prepare the bread: Slice the bread in half horizontally
- 1 large round bread loaf or boule, (about 9 inches in diameter, 1 1/4 pounds)
- 1/4 cup olive oil, divided
- 12 ounces thinly sliced deli ham, such as black forest
- 8 ounces thinly sliced Genoa salami
- 8 ounces thinly sliced provolone cheese
- 1 large tomato, thinly sliced
- 2 cups shredded iceberg lettuce (about 2 ounces)
- 3 tablespoons red wine vinegar

- Freshly ground black pepper

Heat 2 inches of Peanut Oil or Lard to 360 degrees in a Cast Iron dutch oven
- 2 Catfish Fillets, cut into fingers
- 1 Cup Corn Meal
- 1/4 Cup Wondra Flour
- 3 Tbsp Creole Seasoning
- Salt & Pepper
- Peanut Oil or Lard for frying
Chicken with Creamy Mushroom Sauce Recipe

1 Mix 1/2 cup flour, 1/2 teaspoon of salt and a 1/4 teaspoon of pepper in a shallow bowl
- 3 to 4 pounds bone-in, skin-on chicken pieces (we used thighs), trimmed of excess fat
- 1 1/2 teaspoons Kosher salt
- 1/2 cup flour for dredging
- 1/4 teaspoon ground black pepper
- 1/4 cup plus 2 Tbsp olive oil
- 1 Tbsp butter
- 1/4 cup chicken broth
- 1 small onions, chopped (about 1 cup)
- 3/4 pound fresh mushrooms, thickly sliced (I use cremini with a handful of shiitakes included for more intense mushroomy flavor)
- 1 clove of garlic, crushed
- 1/4 teaspoon dried thyme or 1 teaspoon fresh thyme
- 1/2 cup sour cream
- 1/2 cup heavy cream

Break sausage into chunks into a large pot
- 8 oz hot or sweet Italian sausage, removed from casings
- 1 large onion, chopped
- 1 cup sliced carrots
- 2 medium all-purpose potatoes, peeled and cut in 3/4-in. chunks
- 1 can (14 1/2 oz) reduced-sodium chicken broth
- 1 1/4 cups water
- 2 tsp minced garlic
- 8 oz green cabbage, cut in thick shreds (4 cups)
- 1 Tbsp flour
