- 4 1/2 cups flour
- 1 tsp kosher salt

- 1 egg, lightly beaten

Place the warmed milk in a large mixing bowl
- 1 3/4 cups milk, warmed to 110 degrees F. (bathwater warm)

- 2 teaspoons active dry yeast
- 3-3 1/2 cups bread flour

Homemade Tzatziki Recipe

Grate the cucumber and toss it with a pinch of salt
- 1 6 oz container nonfat Greek yogurt
- 2 small skin on Persian cucumbers (or hothouse, spit in half seeds removed)
- 1/2 teaspoon minced garlic (or more if you like things garlicky!)
- juice of 1 small lemon
- 1 teaspoon olive oil

Mac & Cheese with Roasted Chicken

1. Place a large pot of salted water over high heat and bring to a rapid boil
- 1 tablespoon vegetable oil
- 1 pound dried rigatoni
- 1 quart heavy cream
- 2 tablespoons chopped fresh rosemary
- 1 clove fresh garlic, crushed
- 8 ounces goat cheese
- 2 cups shredded roasted chicken

- 1 cup brown rice

- 3 * 3 tablespoons extra-virgin olive oil

- 1 * 1 large garlic clove, pressed
- 1 * 1 4- to 4 1/2-pound roasting chicken, cut into 8 pieces, backbone removed

Marinate the chicken with the garlic, ginger, 1 tablespoon of soy sauce and oyster sauce

- A thumb sized piece of ginger, grated
- 1 tablespoon of oyster sauce
- 2 tablespoons of soy sauce
- 2 chicken breasts, sliced into thin strips
- 100 g of rice vermicelli noodles
- 2 tablespoons of sunflower oil
- 2 celery sticks, finely sliced
- 1 carrot, finely sliced
- 4 spring onions
- 1 tablespoon of Asian curry powder
- 1 teaspoon of sesame oil

Herbed Fish Wrapped in Lettuce

- 3 tablespoons unsalted butter, softened
- 2 tablespoons chopped mixed fresh tarragon and/or parsley
- 1 tablespoon chopped shallots
- 4 6-ounce white fish fillets, such as flounder, sole or tilapia
- 4 large green or red leaf lettuce leaves, center rib discarded
Cabernet Braised Short Ribs

These are great made a day early and chilled overnight
- Ribs
- 8-9 pounds meaty short ribs
- 2 tablespoons fresh rosemary, minced
- 2 tablespoons fresk thyme, minced
- 1 tablespoon coarse salt
- 1 tablespoon freshly ground black pepper
- 1/4 cup (about) vegetable or olive oil
- 2 - 750 ml bottles of Cabernet Sauvingnon
- 2-4 cups beef stock (this will depend on the size and shape of the pot you use, you will need enough to just about cover the ribs with liquid)
- 2 tablespoons of butter, room temperature
- 2 teaspoons all purpose flour
- Meyer Lemon Herb Gremolata
- 1/4 cup chopped italian parsley
- 3 tablespoons finely grated lemon peel, meyer lemon if it is in season
- 3 garlic cloves, minced
- 2 tablespoons finely minced rosemary
- 2 tablespoons finely minced thyme
- Mushroom Risotto
- 12-16 cups canned low sodium chicken broth
- 1 ounce dried porcini mushrooms
- 1/2 cup unsalted butter, divided (one stick)
- 4 tablespoons olive oil, divided
- 5-6 shallots, minced
- 1 1/2 pounds fresh mushrooms, chopped (I used a mix of white and baby bellas)
- 3 cups arborio rice
- 1 1/3 cup white wine
- 1 1/3 cup grated parmesan cheese
- 1/3 cup italian parsley, chopped
