Linguini with Asparagus and Pine Nuts

This one works great as either an entrée or a side dish with chicken or fish
- 12 ounces linguine (3/4 box)
- 1/4 cup olive oil
- 1/4 cup pine nuts
- 4 cloves garlic, sliced
- 2 pounds asparagus, trimmed and cut into 1-inch pieces
- kosher salt and black pepper
- 1 cup shaved Parmesan (about 3 ounces)
Chop Suey

Preheat the oven to 350 degrees
- 2 medium onions, chopped
- 1 cup chopped celery
- 1/2 cup chopped green pepper
- 1 pound pork sausage, finely chopped, or ground beef
- 1 cup uncooked rice
- 1 can Cream of Chicken Soup
- 1/2 cup water
- 1/4 cup soy sauce
- 1 can bean sprouts*, or 1 cup fresh bean sprouts, chopped
- 1 can water chestnuts*, sliced
- Salt and pepper to taste
- 6 ounces chow mein noodles
- Given the difficulty of finding water chestnuts or bean sprouts in ranch country, I used La Choy Chop Suey Canned Vegetables, which also has bits of onion and celery.
Potato Gratin with Rosemary Crust

1. Preheat oven to 450°. Unroll piecrusts on a lightly floured surface
- 1 (14.1-oz.) package refrigerated piecrusts
- 1 tablespoon chopped fresh rosemary
- 1/4 teaspoon freshly ground pepper
- 2 cups (8 oz.) shredded Gruyère cheese, divided
- 1 1/2 pounds Yukon gold potatoes
- 1 1/2 pounds sweet potatoes
- 1 teaspoon kosher salt
- 2/3 cup heavy cream
- 1 garlic clove, minced
- Garnish: fresh rosemary sprigs
Classic Gimlet

Combine Stirrings Clarified Key Lime Juice and Tanqueray London Dry with plenty of ice in a rocks glass
- 1 oz. Stirrings® Clarified Key Lime Juice
- 1.5 oz. Tanqueray® London Dry Gin
- 1 slice lime
Cumin-Crusted Grilled Tomatoes

- 2 ounces parmesan cheese, cut into 4 pieces
- 1/2 cup yellow cornmeal
- 2 Tablespoons chives, cut into 1-inch pieces
- 1 teaspoon cumin
- 1 teaspoon sugar
- 1 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 1/4 cup chopped parsley, or dried parsley flakes to taste (optional)
- 4 firm, slightly under-ripe tomatoes
- Freshly ground pepper
- 3 Tablespoons olive oil

- 3 bunches asparagus, approximately 1 pound, woody ends trimmed and discarded
- 2 Tablespoons extra-virgin olive oil
- Kosher salt and freshly cracked black pepper to taste
- 1/4 cup capers, ideally small, drained, rinsed and patted dry
- Grated zest of 1 lemon
- 2 teaspoons lemon juice
- 1 small garlic clove, peeled, crushed and minced
- 1/3 cup parsley leaves, roughly chopped
- 1/2 cup crumbled caprino fresco cheese, or another soft goat cheese like chèvre

Original Chex Mix

In large microwavable bowl, mix cereals, nuts, pretzels and bagel chips; set aside
- 3 cups Corn Chex® cereal
- 3 cups Rice Chex® cereal
- 3 cups Wheat Chex® cereal
- 1 cup mixed nuts
- 1 cup bite-size pretzels
- 1 cup garlic-flavor bite-size bagel chips or regular-size bagel chips, broken into 1-inch pieces
- 6 tablespoons butter or margarine
- 2 tablespoons Worcestershire sauce
- 1 1/2 teaspoons seasoned salt
- 3/4 teaspoon garlic powder
- 1/2 teaspoon onion powder
