- 1 gallon of water
- 1-lb bag of coarsely ground coffee
- (coffee filters or several layers of cheese cloth)

- 1 cup fresh or frozen cranberries
- 1/4 cup orange juice
- 1/2 cup granulated sugar
- 3 Tablespoons cornstarch
- 1 cup finely chopped peeled cooking apple (1 medium)

- 2 Tablespoons milk
- 2 Tablespoons coarse sugar

Mac 'n Cheese Pie

- 2 (8-ounce) cups shredded Cheddar cheese, divided
- 1 cup uncooked elbow macaroni

- 1/8 teaspoon dry mustard

Here's a skinny version of an old favorite, just as creamy and yummy as the original
- FOR THE CASSEROLE
- 1 pound medium shrimp, peeled and deveined
- 2 Tablespoons olive oil, divided
- Kosher salt and freshly ground black pepper, to taste
- 8 ounces whole wheat penne pasta
- 1 (14.5-ounce) can petite diced tomatoes, drained
- 1/2 cup reduced fat mozzarella cheese
- 1/2 teaspoon crushed red pepper flakes, optional
- 2 Tablespoons grated Parmesan
- 2 Tablespoons chopped fresh parsley leaves
- FOR THE ALFREDO SAUCE
- 2 Tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 Tablespoon all-purpose flour
- 1 (6-ounce) can 2% evaporated milk
- 1 ounce light cream cheese
- 1/4 cup chicken broth, or more, to taste
- Kosher salt and freshly ground black pepper, to taste

- 2 Tablespoons unsalted butter
- 2 pounds green beans, trimmed and broken in half
- Salt, to taste
- 6 slices bacon
- 2 shallots, finely chopped (about 1/2 cup)
- 1/2 pound mushrooms, sliced
- 1 cup crème fraîche
- 1/3 cup heavy cream
- 6 ounces Gruyère, shredded (1 1/2 cups)
- 2 teaspoons chopped fresh marjoram or 1 teaspoon fresh thyme leaves (optional)
- 1/2 cup bread crumbs (or crumbled Ritz crackers)

- 1 pound ground bison or ground dark turkey
- 1 large onion, finely chopped
- 1 (12-ounce) bottle of beer
- 1 (14-1/2-ounce) can diced tomatoes
- 1/2 cup strong brewed coffee
- 1 Tablespoon tomato paste
- 1/4 cup brown sugar
- 1 Tablespoon chile sauce
- 1 tablespoon cocoa powder
- Half a serrano or other hot pepper, seeded and finely chopped, or to taste
- 1-1/2 Tablespoons (4-1/2 tsp) ground cumin
- 1 1/2 teaspoons ground coriander
- 1 teaspoon cayenne pepper, or to taste
