Frozen Mojito

For simple syrup, combine 4 Tbsp Sugar and 4 Tbsp Water in saucepan on warm stove until sugar dissolves
- 2 Limes, Juiced,
- 10-12 Mint Leaves,
- 2 OZ. Simple Syrup*,
- 6 OZ. White Rum,
- 2 Cups Ice cubes
Chipotle Chili con Carne

This is a good recipe for using up leftover steak
- 1 Tablespoon chili powder
- 1 Tablespoon ground cumin
- 3/4 pound beef for stew, cut into 1-inch pieces
- Nonstick cooking spray
- 1 can (about 14 ounces) fat-free reduced-sodium beef broth
- 1 tablespoon minced canned chipotle chiles in adobo sauce, or to taste
- 1 can (14-1/2 ounces) diced tomatoes, undrained
- 1 large green bell pepper or 2 poblano peppers, cut into 1/2-inch pieces
- 2 cans (15 ounces each) pinto or red beans, rinsed and drained
- Chopped fresh cilantro (optional)
Shrimp Lo Mein

Thaw shrimp, if frozen. Cut shrimp in half lengthwise
- 1 pound fresh or frozen peeled and deveined medium shrimp
- 1/3 cup water
- 3 tablespoons soy sauce
- 1 tablespoon cornstarch
- 1 tablespoon cooking oil
- 2 stalks celery, thinly bias-sliced (1 cup)
- 1 medium onion, chopped (1/2 cup)
- 2 cups shredded cabbage
- 2 cups fresh pea pods, strings removed, or one 6-ounce package frozen pea pods, thawed
- 1 medium carrot, shredded (1/2 cup)
- 4 ouncesdried Chinese egg noodles or linguine, cooked and drained
- 2 green onions, sliced (1/4 cup)
- Carrot flowers (optional)
Refried Beans

- One 15-1/2 ounce can pinto beans, drained and rinsed
- 3 tablespoons extra-virgin olive oil
- 1/2 medium onion, chopped
- 4 cloves garlic, minced
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cumin
- 2/3 to 1 cup chicken broth, homemade or low-sodium canned
- Kosher salt and freshly ground black pepper
- 1 tablespoon chopped fresh coriander (cilantro) (optional)
