Creamy Pasta Salad with Celery

- 1 pound medium pasta shells
- Coarse salt and ground pepper
- 1 cup light mayonnaise
- 1/3 cup fresh lemon juice
- 6 celery stalks, halved lengthwise and thinly sliced crosswise, plus 1 cup celery leaves
- 1/2 medium red onion, finely chopped

- 2 pounds large Yukon Gold or other yellow-fleshed potatoes

- 1 lemon wedge plus additional for serving

- 3 3/4 cups all-purpose flour

- 2 tablespoons olive oil
- 2 tablespoons white-wine vinegar
- Coarse salt and ground pepper
- 3 ounces fresh goat cheese
- 3 medium tomatoes, cored and sliced crosswise 1 inch thick
Sour Cream Enchiladas

- 12 whole Corn Tortillas
- Canola Oil, For Frying
- 1 can (20 Ounce) Enchilada Sauce
- 2 cups Sour Cream
- 3 cups Sharp Cheddar Cheese, Grated
- 1 cup Sliced/chopped Green Onions
- 1/2 teaspoons Ground Cumin
- 1/4 teaspoons Cayenne Pepper
Garlic-Marinated Chicken Cutlets with Grilled Potatoes

- 3 pounds baby red new potatoes, halved or quartered if large

- 1/4 cup white-wine vinegar
- 3 tablespoons fresh thyme leaves, chopped, plus sprigs for garnish, if desired
