- 4 bone-in, skin-on chicken breast halves

- 1 1/2 (16-ounce) bags tortilla chips
- 3 cups shredded cheddar cheese

Firecracker Shrimp

Combine all ingredients in a large Ziploc bag, then add shrimp and marinate for 20 minutes to 2 hours
- 1 pound large (16 to 20 count) shrimp, peeled and deveined.
- 2 tablespoons hot chili sauce (Sriracha is the best!)
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- 2 teaspoons sugar
- 4 to 5 cloves garlic, pressed
Coconut Ice Cream

Directions: Put the flaked coconut in a large, heavy saucepan over medium-high heat
- Ingredients:
- For a double coconut treat, stir 1/2 cup toasted shredded coconut into the ice cream during the final minute of processing. To make a colorful sundae, garnish the ice cream with diced tropical fruit.

- 8 oz shredded Mozzarella cheese
- 1 lb shredded sharp cheddar cheese
- 1/2 to 1 cup chopped green onion (to taste)
- 1/2 cup mayonnaise
- 2 Tbsp sour cream (optional)
- 3-4 cloves garlic, minced
- 1 stick unsalted butter (1/2 cup, 4 ounces), softened to the point of being slightly melted
- 1 to 2 loaves of French or Italian bread (I used Ciabatta), depending on the size of the loaves
Roman-Style Meatballs with Gnocchi alla Romana

In a small bowl, combine the bread crumbs and milk and let stand for 10 minutes
- 1 1/2 cups fresh bread crumbs
- 1/2 cup milk
- 4 oz. finely chopped prosciutto
- 1 lb. ground beef
- 1 lb. ground pork
- 2 eggs, lightly beaten
- 1/2 cup grated Parmigiano-Reggiano cheese
- 2 Tbs. finely chopped fresh flat-leaf parsley
- 2 tsp. finely chopped fresh oregano
- 6 Tbs. finely chopped fresh basil
- 5 garlic cloves, minced
- 1 tsp. kosher salt, plus more, to taste
- 1/2 tsp. freshly ground pepper, plus more, to taste
- 5 Tbs. olive oil
- 1 yellow onion, diced
- 1 can (28 oz.) crushed tomatoes with juices
- Gnocchi alla Romana for serving (see related recipe at left)
Sour Cream Chicken Enchiladas

Preheat oven to 450. In a 13x9" baking pan, spread 1 cup sour cream
