Marinated Lamb Kebabs

- 1 pound plain yogurt (regular or lowfat)
- 1/4 cup good olive oil, plus more for brushing grill
- 1 teaspoon lemon zest
- 1/4 cup freshly squeezed lemon juice (2 lemons)
- 5 tablespoons fresh whole rosemary leaves
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 2 pounds top round lamb
- 1 red onion
Chile con Queso- Healthier Version

PREPARATION Heat oil in a large saucepan over medium heat
- 2 teaspoons extra-virgin olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1/2 cup pale ale, or other light-colored beer
- 1 1/2 cups low-fat milk, divided
- 3 tablespoons cornstarch
- 1 3/4 cups shredded sharp Cheddar, preferably orange
- 1 10-ounce can diced tomatoes with green chiles, (see Note), drained, or 1 1/4 cups drained petite-diced tomatoes
- 2 tablespoons lime juice
- 1 teaspoon salt
- 1 teaspoon chili powder
- Cayenne pepper, to taste (optional)
- 1/4 cup sliced scallions
- 2 tablespoons chopped fresh cilantro
Smashed Potatoes

In a medium saucepan, cover potatoes with salted water; bring to a boil
- 3 pounds new red potatoes, cut into chunks
- Salt
- 1 stick butter
- 3/4 cup milk
- 1/4 teaspoon pepper
- 3 tablespoons chopped chives or scallion greens, plus more for garnish
Macaroni Salad

Directions: In a large bowl, stir together the pasta, celery, onion, bell pepper and chives
- Ingredients:
- 1/2 lb. elbow pasta, cooked, drained well and cooled
- 2 celery stalks, cut into 1/4-inch dice
- 1/4 cup finely diced red onion
- 1/2 red bell pepper, seeded and cut into 1/4-inch dice
- 2 Tbs. chopped fresh chives
- 2 egg yolks
- 1 tsp. Dijon mustard
- 1/2 cup canola oil
- 2 Tbs. water
- 1/4 cup whole-grain mustard
- 2 Tbs. finely chopped fresh flat-leaf parsley
- 1/2 tsp. paprika
- Kosher salt and freshly ground pepper, to taste

- 3 whole 14.5 Ounce Cans Diced (or Whole) Tomatoes

- 2 pounds Jumbo Or Large Shrimp, Peeled And Deveined
- Salt And Pepper, to taste
- Fresh Parsley, Minced
- 1 pound Linguine, Uncooked

Grilled Fingerling Potatoes

- 3 lb. fingerling potatoes, such as red Russian, Yukon Gold or any thin-skinned new potato
- 1/2 cup plus 2 Tbs. white wine

- 1 Tbs. whole-grain mustard
- 2 Tbs. minced fresh flat-leaf parsley
- 2 Tbs. minced fresh tarragon
