Mexican Ceviche Tacos

Ceviche tacos are perfect supper for a hot summer evening
- 1 1/4 pounds very fresh (sushi-grade) fish fillets (such as tuna, hamachi, barramundi, or mahi-mahi), cut into 1/2-inch cubes
- Fine sea salt
- Freshly ground black pepper
- 3 tablespoons fresh lime juice
- 2 tablespoons fresh lemon juice
- 2 teaspoons sugar
- 1 cup chopped seeded tomatoes
- 3/4 cup chopped red onion
- 2 tablespoons sliced pickled jalapeños from jar plus 1 tablespoon liquid from jar
- 1 tablespoon olive oil
- 1/2 large head romaine lettuce, very thinly sliced crosswise (3 to 4 cups)
- 1 large avocado, peeled, pitted, diced
- 3 tablespoons chopped fresh cilantro
- 12 crisp taco shells
- Salsa, for garnish
Braised Short Ribs

Directions: Season the short ribs with salt and pepper
- Ingredients:
- 4 4 4 lb. bone-in beef short ribs
- to and freshly ground pepper, to taste
- 2 2 2 cups all-purpose flour
- 3 3 3 Tbs. olive oil, plus more as needed
- 2 2 2 large yellow onions, chopped
- 3 3 1-inch large carrots, peeled and cut into 1-inch chunks
- 4 4 4 garlic cloves, chopped
- 1 1 1 bottle (750ml) full-bodied red wine
- 1 1 1 can (6 oz.) tomato paste
- 3 3 3 fresh thyme sprigs
- 2 2 2 fresh rosemary sprigs
- 1 1 1 bay leaf
- 1 to 2 1 to 2 2 cups beef stock
Chicken Roll-Ups With Goat Cheese And Arugula

Preheat oven to 425 degrees
- 8 chicken breast cutlets, (about 1 1/2 pounds)
- Coarse salt and ground pepper
- 1 large bunch arugula, (about 4 ounces), stems trimmed
- 3 ounces soft goat cheese, broken into small pieces
- 2 teaspoons olive oil
Milk Caramels

1. In heavy 2 qt saucepan, mix sugar, corn syrup and salt
- 1 c sugar
- 2/3 c light corn syrup
- 1/2 t salt
- 1 1/2 c milk
- 1/2 t vanilla
- 1/2 c nutmeats, chopped, if desired
- 1/2 c butter or margarine
Classic French Toast

Any dense bread such as challah, brioche, or sourdough will make rich French toast
- 6 large eggs
- 1 1/2 cups heavy cream, half-and-half, or milk
- 2 tablespoons pure vanilla extract
- 1/2 teaspoon ground cinnamon
- Pinch of ground nutmeg
- Pinch of salt
- 6 slices (1-inch-thick) bread, preferably day old
- 4 tablespoons unsalted butter
- 4 tablespoons vegetable oil
- Pure maple syrup, for serving (optional)
Mini Meatball Sandwiches
