Oven 375. Grease two baking sheets w/butter and line with parchment
- 1 pound (4 sticks) unsalted butter, room tempearture, plus more for baking sheets
- 3 cups packed light-brown sugar
- 1 cup granulated sugar
- 4 large eggs
- 2 tsps pure vanilla extract
- 3 1/2 cups all purpose flour
- 1 1/2 tsp salt
- 2 tsps baking soda
- 1 1/2 cups choco chips
Tricolor Potato Salad

Put the Yukon gold and sweet potatoes in a large pot and cover with water
- 1/2 pound Yukon gold potatoes, washed and cut into 1 by 1-inch pieces
- 1/2 pound sweet potatoes, washed and cut into 1 by 1-inch pieces
- 1/2 pound purple potatoes, washed and cut into 1 by 1-inch pieces
- 3 scallions, sliced
- 2 stalks celery chopped
- 1 tablespoon salt
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 2 tablespoons brown mustard
- 1 tablespoon cider vinegar

- 1 teaspoon baking soda
- 1 teaspoon sea salt
- 1 teaspoon cinnamon
- 1 teaspoon ground ginger
- 1 teaspoon nutmeg
- 12 dates, pitted and chopped
- 1 cup hot water
- 4 small sweet potatoes (baked, flesh scooped out– about 2 cups)
- 3/4 cup rice milk
- 1/3 cup cold pressed vegetable oil
- 1/3 cup maple syrup
- 2 teaspoons vanilla extract
