Southern Fried Chicken

Oil, for frying, preferably peanut oil Heat the oil to 350 degrees F in a deep pot
- House Seasoning:
- 3 eggs
- 1 cup hot red pepper sauce
- 2 cups self-rising flour
- 2 1/2 pound chicken, cut into pieces
- House seasoning
- 1 cup salt
- 1/4 cup pepper
- 1/4 cup garlic powder
- To make the House Seasoning, mix the ingredients together and store in an air-tight container for up to 6 months.

Melt the butter in a skillet over medium heat
- Turkey Mix:
- 2 tablespoons butter
- 1 cup diced celery
- 1 cup diced scallions
- 2 green apples, cored and diced
- 1 ⁄2 cup canned chipotle chiles in adobo sauce
- 1 cup store-bought mango Chutney
- 2 pounds ground turkey
- 1 ⁄4 cup grated lemon zest
- 1 teaspoon sea salt

Walnut-Crusted Chicken Breasts

Preheat oven to 425 degrees
- 2 slices whole-wheat bread, dried
- 1/3 cup walnuts
- 2 tablespoons Parmesan cheese, freshly grated
- Coarse salt and ground pepper
- 1 large egg white
- 4 chicken breast halves, boneless and skinless (6 to 8 ounces each)
- 1 tablespoon grapeseed oil
- Lemon slices, for serving

Sweet Potato Muffins

Preheat oven 350. Oil muffin tins (I use coconut oil) or line
- 1 1/2 cups whole wheat flour
- 1 cup spelt flour
- 1/2 cup unbleached pasty flour
- 1 tablespoon baking powder (aluminum-free)
- 1 teaspoon baking soda
- 1 teaspoon sea salt
- 1 teaspoon cinnamon
- 1 teaspoon ground ginger
- 1 teaspoon nutmeg
- 12 dates, pitted and chopped
- 1 cup hot water
- 4 small sweet potatoes (baked, flesh scooped out– about 2 cups)
- 3/4 cup rice milk
- 1/3 cup cold pressed vegetable oil
- 1/3 cup maple syrup
- 2 teaspoons vanilla extract
Roasted Butternut Squash Mash

Rotisserie Prime Rib Roast
