Beef Short Ribs

1. Sprinkle ribs on all sides with salt and pepper; cover and chill 12 to 24 hours
- 4 pounds beef short ribs, trimmed (about 10 ribs)
- 1 tablespoon kosher salt
- 1 1/2 teaspoons freshly ground black pepper
- 4 cups unsalted beef stock
- 1/4 cup olive oil
- 1 3/4 cups red wine
- 1/4 cup brandy or sherry
- 1 cup drained canned whole tomatoes, chopped
- 3 celery ribs, chopped
- 2 medium-size carrots, chopped
- 1 medium-size yellow onion, chopped
- 1 small garlic bulb, cut in half crosswise
- 1 bay leaf
- 3 fresh flat-leaf parsley sprigs
- 3 fresh thyme sprigs
- 2 fresh rosemary sprigs
- 2 tablespoons butter

Coconut Lime Rice Pudding
