Cranberry Drop Cookies

1. In a mixing bowl, cream butter and sugars
- 1/2 cup butter or margarine, softened
- 1 cup sugar
- 1 cup packed brown sugar
- 1 egg
- 1/4 cup milk
- 2 tablespoons lemon juice
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 1 (12 ounce) package fresh or frozen cranberries, chopped
- 1 cup chopped walnuts
Lowcountry Shrimp and Grits

1. Cook bacon over medium-high heat until crisp
- 4 center-cut bacon slices, chopped
- 1/2 cup chopped onion
- 1 tablespoon chopped fresh thyme
- 8 ounces cremini mushrooms, quartered

- 3 1/4 cups unsalted chicken stock, divided
- 3/4 cup black coffee
- 1/2 cup lower-sodium tomato juice

- 4 1/2 cups sugar
- 1 (12 ounce) can evaporated milk
- 3 (12 ounce) packages chocolate chips
- 1/2 pound margarine, melted
- 7 ounces marshmallow cream
- 2 cups nuts
- 1 teaspoon vanilla
Orange Pork Chops and Applesauce (Rachel Ray's)

Pre-heat the oven to 400°F
- 1 1/2 pounds baby red-skinned potatoes, cut in half
- 1 pound green beans, trimmed and cut into 1-inch pieces
- 6 tablespoons extra virgin olive oil (EVOO), divided
- Salt and freshly ground black pepper
- 1/4 cup parsley leaves (about a handful), chopped
- 4 McIntosh apples, peeled, cored and diced
- 1 cup all-natural apple juice or cider (it should look cloudy)
- 3 tablespoons light or dark brown sugar
- Zest of 1 orange, reserving the juice
- 1/4 cup soy sauce or Tamari (dark soy sauce)
- 4 1-inch thick center-cut boneless pork loin chops (6-8 ounces each)

- 1 teaspoon garlic powder
- 1 teaspoon Spanish smoked paprika
- 1/4 teaspoon ground coriander
- 1/4 teaspoon freshly ground black pepper

- 2 pounds tilapia fillets
- 1 tablespoon olive oil
- 1 tablespoon finely chopped fresh cilantro

Meat Loaf Stuffed with Prosciutto and Spinach

This luxurious yet easy take on classic meat loaf gets stuffed with spinach, carrots, prosciutto and cheese
- 2 large carrots, each cut lengthwise into 6 slices
- 4 cups spinach (3 ounces), thick stems discarded
- 2 pounds lean ground beef
- 2 pounds ground pork
- 2 1/2 cups fresh bread crumbs
- 2 cups freshly grated pecorino cheese (6 ounces)
- 6 large eggs, lightly beaten
- Kosher salt and freshly ground pepper
- 3 tablespoons all-purpose flour
- 12 thin slices of prosciutto (4 ounces)
- 1/2 pound caciocavallo or provolone cheese, cut into twelve 1/8-inch-thick slices
- 1/4 cup extra-virgin olive oil
- 4 sprigs of rosemary
- 2 cups dry red wine
- 1 cup water
Creamy Asparagus and Pancetta Penne

1. Combine flour and butter in a bowl until a paste forms
- 2 tablespoons all-purpose flour
- 2 tablespoons butter, softened
- 1 teaspoon olive oil
- 2 ounces chopped pancetta
- 1 (8-ounce) package sliced cremini mushrooms
- 1/4 cup white wine or 2 tablespoons each lemon juice and water
- 1 teaspoon salt, divided
- 4 cups unsalted chicken stock
- 3 cups 1% low-fat milk, divided
- 12 ounces uncooked whole-wheat penne (such as Barilla)
- 1 bay leaf
- 1 cup frozen green peas
- 12 ounces asparagus, trimmed and cut into 2-inch pieces
- 1 tablespoon chopped fresh thyme
- 3 tablespoons chopped fresh parsley
- 1 teaspoon grated lemon rind
- 3/4 teaspoon black pepper
Mango-Spinach Salad with Warm Bacon Vinaigrette

This is a delicious partner for grilled fish
- 4 thick bacon slices, diced
- 1/2 medium-size red onion, thinly sliced
- 1/4 cup red wine vinegar
- 1 tablespoon lime juice
- 1 tablespoon honey
- 1 (9-oz.) package fresh spinach
- 1 mango, peeled and diced
- 1/3 cup crumbled queso fresco (fresh Mexican cheese)
- Salt and pepper to taste
Roasted Cauliflower

- Head cauliflower, cut into bite-size florets (or can use 16oz bag of frozen and thawed or mix of broccoli/ cauliflower)
- 2 tablespoons extra virgin olive oil (EVOO)

- 2 tablespoons butter
- 1 (8-oz.) package sliced fresh mushrooms
- 3 ounces finely chopped prosciutto
- 3 cups chopped cooked chicken
- 1 cup frozen baby English peas, thawed
- 1 (10 3/4-oz.) can reduced-fat cream of mushroom soup
- 1 (10-oz.) container refrigerated light Alfredo sauce
- 1/2 cup chicken broth
- 1/4 cup Marsala
- 1 cup (4-oz.) shredded Parmesan cheese
