Soft Sugar Cookies

Preheat oven 350*. Cream shortening and sugar
- 1 cup(s) shortening
- 2 large eggs
- 1/2 teaspoon(s) salt
- 2 teaspoon(s) baking powder
- 1/2 teaspoon(s) baking soda
- 1 1/2 cup(s) sugar
- 1/2 teaspoon(s) nutmeg
- 1 teaspoon(s) vanilla
- 1 cup(s) sour milk, 1 C. milk w\1 tsp vinegar let set 1 min
- 3 1/2 cup(s) flour
Basic Marinara Sauce

Sauté onions in hot oil in a large Dutch oven over medium-high heat 5 minutes or until tender
- 3 cups chopped yellow onions (about 3 medium)
- 3 tablespoons olive oil
- 1 tablespoon sugar
- 3 garlic cloves, minced
- 5 teaspoons freshly ground Italian seasoning
- 2 teaspoons salt
- 2 tablespoons balsamic vinegar
- 2 cups low-sodium fat-free vegetable broth
- 3 (28-oz.) cans no-salt-added crushed tomatoes
Fish Tacos with Corny Guac

In a large bowl, combine the first 7 ingredients
- 3 tablespoons EVOO or canola oil
- 2 tablespoons fresh lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon granulated garlic
- 1/2 teaspoon granualted onion
- 1 1/2 pounds tilapia, mahi-mahi or other sustainable white fish, cut into 1-inch strips
- Salt and pepper
- 1/2 small red onion, finely chopped
- 1 large jalapeno or 2 serrano chile peppers, seeded and finely chopped
- 2 fresh lemon juice
- 1 clove garlic, grated or pasted
- 2 ripe avocados, preferably Haas, halved and pitted
- 1 ear corn, grilled or roasted, kernels scraped, or 1 cup frozen fire-roasted corn kernels, such as Whole Foods' 365 brand, thawed
- 1 plum tomato, seeded and finely chopped
- 2 chopped cilantro
- 12 - 16 small (6-inch) corn tortillas
- Shredded iceberg lettuce
Vanilla Citrus Punch

Combine all the juices in a large pitcher
- 3 cups fresh orange juice
- 1 orange , sliced
- 1 cup fresh or unsweetened canned pineapple juice
- 1/4 cup fresh lime juice
- 1/4 cup fresh lemon juice
- 1 whole vanilla bean
- 1 1/2 cups ginger ale or club soda , chilled

- 4 medium zucchini, halved lengthwise and thinly sliced (about 1 1/2 lb.)
- 1 (8-oz.) package sliced fresh mushrooms
- 2 garlic cloves, minced
- Vegetable cooking spray
- 1 medium-size red bell pepper, chopped 1 medium-size yellow bell pepper, chopped
- 1 yellow onion, chopped
- 1/2 teaspoon salt
- 1 1/2 cups fat-free ricotta cheese
- 1 large egg
- 2 cups (8 oz.) shredded part-skim mozzarella cheese, divided
- 1/2 cup freshly grated Parmesan cheese, divided
- 5 cups Basic Marinara Sauce

Meaty Mushroom Ragu

Cook pasta until al dente; drain, reserving 1 cup pasta cooking water
- 8 ounces fettuccine
- 12 ounces white mushrooms, sliced
- 3 cloves garlic, minced
- 2 tablespoons butter
- 1/2 pound ground beef
- 1/3 cup red wine
- 2 tablespoons tomato paste
- 2 tablespoons grated Parmesan
Cheesy Spinach-&-Artichoke Stuffed Spaghetti Squash

1. Place squash cut-side down in a microwave-safe dish; add 2 tablespoons water
- 1 (2½ to 3 pound) spaghetti squash, cut in half lengthwise and seeds removed
- 3 tablespoons water, divided
- 1 (5 ounce) package baby spinach
- 1 (10 ounce) package frozen artichoke hearts, thawed and chopped
- 4 ounces reduced-fat cream cheese, cubed and softened
- ½ cup grated Parmesan cheese, divided
- ¼ teaspoon salt
- ¼ teaspoon ground pepper
- Crushed red pepper & chopped fresh basil for garnish
