Ingredients

  • Filling:
  • 1/2 cup water chestnuts, sliced thin
  • 1/2 cup cabbage, shredded
  • 1/4 cup carrots, shredded
  • 1/4 cup green onion
  • 2 tablespoons red bell peppers, finely chopped
  • 1 large egg, lightly beaten
  • 1 teaspoon garlic, finely minced
  • 2 teaspoons ginger root,grated
  • 2 teaspoons tomato paste
  • 1 teaspoon dijon mustard
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon brown sugar
  • 1/2 teaspoon black pepper, freshly ground
  • 1/4 teaspoon cayenne pepper
  • 40 small wonton wrappers
  • water, for sealing wrappers
  • 3 tablespoons olive oil, for frying
  • 1 tablespoon chili oil
  • 1 1/3 cups vegetable stock
  • Sauce:
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon chili oil

Preparation

Step 1

Combine all of the filing ingredients in a medium sized mixing bowl.

To form potstickers:
Remove 1 wrapper from package, covering the others with a damp cloth. Brush 2 edges of the wrapper with water. Place 1/2 rounded teaspoon of the vegetable mixture in the center of the wrapper. Fold over, seal edges and shape as desired. Set on baking sheet and cover with a damp cloth. Repeat for remaining wrappers.

Heat 12" saute pan over medium heat. Whisk together the olive oil and chili oil. Brush the skillet with the oil mixture when hot. Add 8-10 potstickers at a time to the pan and cook for 2 minutes. Do not allow potstickers to touch and do not turn them. After 2 minutes, add 1/3 cup of the vegetable stock to the pan, turn the heat down tolow, cover and cook another 2 minutes. Remove the potstickers to heat-proof platter and place in warm oven.

Clean pan between batches by deglazing with water and repeat steps for the remaining potstickers.

Whisk together the ingredients for the sauce and serve with warm potstickers and rice.

*Potstickers can be cooked and then frozen. Remove from freezer when ready to eat and let thaw in the refrigerator. Reheat in microwave on medium low until warm.
