Memphis BBQ Sauce

Procedures 1 Melt butter in medium saucepan over medium heat
- Ingredients
- 2 tablespoons unsalted butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 cups tomato sauce
- 1/2 cup cider vinegar
- 1/3 cup rice vinegar
- 1/3 cup molasses
- 3 tablespoons Worcestershire sauce
- 2 tablespoons packed dark brown sugar
- 2 teaspoons yellow mustard
- 1 teaspoon Louisiana hot sauce
- 1 teaspoon Kosher salt
- 1 teaspoon freshly ground black pepper
- 1/4 teaspoon cayenne pepper
Crab Cakes

1. Preheat oven to 250 degrees
- 2 pounds lump crabmeat, picked over for cartilage
- 1 cup dried breadcrumbs
- 1 cup mayonnaise, store-bought or homemade
- 2 large eggs
- 1 red bell pepper, stem, seeds, and ribs removed, cut into 1/8-inch dice
- 1 yellow bell pepper, stem, seeds, and ribs removed, cut into 1/8-inch dice
- 1/2 cup fresh cilantro leaves, chopped
- 4 scallions, chopped
- Coarse salt and freshly ground black pepper
- Vegetable oil, for frying
- Cilantro-Lime Mayonnaise
- 1 1/2 cups canola oil
- 2 tablespoons extra-virgin olive oil
- 2 large eggs
- 2 tablespoons finely chopped cilantro
- Coarse salt
- Juice of 1 lime

- For the pork shoulder rub
- 1/4 cup dark brown sugar
- 1/2 cup white sugar
- 1/2 cup paprika
- 1/3 cup garlic salt
- 1/3 cup kosher salt
- 1 tablespoon chili powder
- 1 teaspoon oregano leaves
- 1 teaspoon cayenne pepper
- 1 teaspoon ground cumin
- 1 teaspoon black pepper

- Pork injection
- 3/4 cup apple juice
- 1/2 cup water
- 1/2 cup sugar
- 1/4 cup salt
- 2 tablespoons Worcestershire
- ------------
- 1 whole pork shoulder (approximately 16 pounds)
- 1 bottle Big Bob Gibson Championship Red Sauce (or substitute your favorite BBQ sauce)
Candied Sweet Potatoes with Kahlua

Heat the oven to 350 degrees F
- 5 tablespoons unsalted butter
- 3 pounds sweet potatoes
- Kosher salt
- 1/2 cup chopped pecans
- 1/2 cup coffee flavored liqueur (recommended: Kahlua)
- 1 cup heavy cream
- 3/4 cup dark brown sugar
- 1 (10.5 ounce) bag mini marshmallows
Chesapeake Corn

- 1 1/2 tablespoons butter or margarine
- 3 cups corn
- 1/2 cup fresh tomatoes diced (golden orange cherry tomatoes used)
- 1/4 cup green bell pepper chopped (optional)
- 1 1/2 teaspoons Old Bay Seasoning
- 1 teaspoon Fresh Parsley
- Fresh Basil (optional)

I use my crockpot for this and cook on low for a long time
- 1 tablespoon oil
- 1/2 cup chopped green pepper
- 1/2 cup chopped onions
- 1 1/2 pounds of ground beef
- 2 cups canned diced tomatoes
- 1 101/2 1 101/2 oz can tomato soup (I prefer Campbells)
- 1/2 te. Paprika
- 1/8 te cayenne
- 1 bay leaf
- 1 tb. chili powder
- 16 oz. can of kidney beans not drained
- Grated cheddar cheese

This is great for brunch since it can be made ahead of time and popped in the oven the day of the brunch
- 1 lb. sausage links, cut into thirds
- 6 slices of bread, crusts trimmed and cut into cubes
- 1 cup sharp cheddar cheese, grated
- 4 eggs, beaten
- 2 cups of milk
- 1/2 te. Salt
- 1/2 te. Dry Mustard

- 1 whole cabbage- look for a large one with good outer leaves
- 1 can tomato soup
- 2 or 3 bay leaves
- 1/2 cup raisins
- 4 tb. brown sugar
- juice of one lemon
- 1/2 box of gingersnaps
- 1 1/2 lbs of ground meat
- cooked rice to equal 1 cup
- 1 grated onion
- salt and pepper to taste
- 1 1/2 cups of sliced carrots
