Pumpkin Pleaser

Preheat oven at 350 degrees
- 1 large can Libby’s pumpkin pie mixture (brown label) 1 large can evaporated milk
- 1 box of yellow cake mix
- 1 cube butter (melted)
- 1 cup of walnuts
- 2 eggs
- water
- whipping cream
- nutmeg
Rugaluch

Although time consuming, these are worth the effort
- 1/2 lb. creamcheese (room temperature)
- 1/2 lb. butter (room temperature)
- 2 egg yolks
- 1/2 cup sugar
- pinch of salt
- 1 te. Vanilla
- 1 te. Baking powder
- 2 1/2 cups of all purpose flour
- Cinnamon and sugar combined
- Chopped walnuts
- Raisins
- Optional ingredients can include apricot jam, apple butter, apple pie spice
Hot Spiced Cider

Nothing like this on a cold winter’s night!
- 2 quarts apple cider
- 2 cloves
- 2 cinnamon sticks
- 4 shots brandy
- orange slices
- 1/4 te. Allspice
- 1/4 te. Nutmeg
Steven's Turkey

This method has been foolproof and the gravy is outstanding
- 3 cups of chopped carrots,
- 1 cup of chopped celery
- 3 cups of chopped onions
- 3 to 4 cloves of chopped garlic
- 1 turkey –size depends on number of people to be served- approximately 1/2 pound per person
- Butter
- Salt and Pepper
Apple Sauce

I like to serve this with Potato Latkes at Hannukah and Passover
- 3 pounds of apples, scrubbed, cored, and sliced into thick slices
- 3/4 cup unsweetened apple juice
- 6 whole cloves
- 1/2 te. Cinnamon
- 1/2 te. Allspice
- 2 tb. firmly packed dark brown sugar
- kosher sweet red wine (optional)
Berger Cookies

- For the cookies
- 8 ounces (2 sticks) unsalted butter, at room temperature
- 1 1/2 teaspoons salt
- 2 teaspoons vanilla extract
- 1 tablespoon baking powder
- 1 1/2 cups sugar
- 3 large eggs
- 4 1/2 cups flour
- 1 cup whole or 2-percent milk
- For the frosting
- 3 1/2 cups (21 ounces) semisweet chocolate chips
- 4 ounces unsweetened chocolate, coarsely chopped
- 2 tablespoons light corn syrup
- 4 tablespoons (1/2 stick) chilled unsalted butter
- 1 1/2 cups heavy cream
Clam Dip

Mix all ingredients. Soften cream cheese first
- 1 package cream cheese
- 1 Tablespoon Mayonnaise
- Garlic Powder to taste
- 3 shakes Worcestershire Sauce
- 1 can clams drained reserve 3/4 liquid

- 1/4 cup red wine vinegar
- 1/2 cup chopped onion
- 2 cloves garlic bruised
- 2 tsps. Dijon Mustard
- 2 tsps. Salt
- 1/2 tsps. crumbled dried Oregano
- 1/2 tsps. crumbled dried Basal
- 1 crushed Bay leaf
- 1/8 tsps. ground pepper
- Leg of Lamb
- Allow 1/2 pound bone in weight per person
White BBQ Sauce

Procedures 1 Mix the salt and white sugar in the cold water until completely dissolved to make the brine

- 1 gallon cold water
- 1 cup kosher salt
- 1/2 cup sugar
- 2 whole chickens, cut in half
- For the Sauce
- 1 cup mayonnaise
- 1 cup apple cider vinegar
- 1 tablespoon lemon juice
- 1 1/2 tablespoons cracked black pepper
- 1/2 teaspoon kosher salt, finely ground
- 1/4 teaspoon cayenne
- Finely ground kosher salt and ground black pepper
- 1/2 cup vegetable oil
- 3-4 light wood chunks (like cherry or apple)
