- 1 1/2 c skim milk
- 1/2 c mashed bananas

Wild Rice Soup III

1.Prepare rice according to package directions
- 1/2 cup uncooked wild rice
- 3 tablespoons butter
- 1 onion, chopped
- 1 cup chopped celery
- 3 tablespoons all-purpose flour
- salt and pepper to taste
- 1 (10.75 ounce) can chicken broth
- 2 cups milk
- 2 cups diced chicken
Pasta salad with mozzarella, sun-dried tomatoes and olives

Bring large pot of water to a boil
- 6 Tbs. olive oil
- 1/2 cup oil-packed sun-dried tomatoes,
- drained
- 1/4 cup red wine vinegar
- 1 Tbs. drained capers
- 1 clove garlic, minced
- 1 lb. medium pasta shells
- 2 cups halved red and yellow cherry
- tomatoes
- 8 oz. fresh water-packed mozzarella,
- drained and cut into 1/2-inch pieces
- 1 cup fresh basil leaves, thinly
- sliced
- 1/2 cup freshly grated Parmesan cheese
- 1/2 cup chopped kalamata olives
- (approximately 20 olives)
Comfort meatballs

In a bowl, combine ground beef and oats
- Meatballs:
- 1 1/2 lbs ground beef
- 3/4 c quick oats
- 1 c milk
- 5 tbsp finely minced onion
- 1 1/2 tsp salt
- black pepper
- 4 tbsp canola oil
- 1/2 c flour
- Sauce:
- 1 c ketchup
- 2 tbsp sugar
- 3 tbsp distilled white vinegar
- 2 tbsp worcestershire sauce
- 4-6 tbsp minced onion
- dash of tobasco
Baked Tomatoes and Zucchini

Place sliced tomatoes, sliced zucchini, and onions in buttered rectangular baking dish
- 6 ripe tomatoes (or canned tomato wedges)
- Salt and pepper to taste
- 1/2 tsp. basil
- 1/4 c. oil
- 1 zucchini squash
- 1/2 tsp. thyme
- 1 onion, sliced
Mom's Potato Latkes

1. Mix potato, onion, eggs, crackers, salt, and pepper together in a large bowl
- 3 cups shredded potato
- 1/4 cup grated onion
- 2 eggs, beaten
- 6 saltine crackers, or as needed, crushed
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2 cup vegetable oil, or as needed

Preheat oven to 350°. In a large bowl, combine the first seven ingredients
- 2 large eggs, lightly beaten
- 3/4 cup 2% milk
- 2/3 cup finely crushed saltines
- 1/2 cup chopped onion
- 1 teaspoon salt
- 1/2 teaspoon rubbed sage
- Dash pepper
- 1-1/2 pounds lean ground beef (90% lean)
- 1 cup ketchup
- 1/2 cup packed brown sugar
- 1 teaspoon Worcestershire sauce
Chicken-Broccoli Mac and Cheese with Bacon

1. Preheat broiler to high
- 6 ounces uncooked large or regular elbow macaroni
- 3 cups prechopped broccoli florets
- 3 bacon slices, coarsely chopped
- 12 ounces skinless, boneless chicken breasts, cut into 1/2-inch pieces
- 1 teaspoon kosher salt, divided
- 1 tablespoon minced fresh garlic
- 1/8 teaspoon ground turmeric
- 1 1/4 cups 1% low-fat milk
- 1 cup unsalted chicken stock (such as Swanson)
- 1/4 cup plus 1 teaspoon all-purpose flour
- 5 ounces sharp cheddar cheese, shredded (about 1 1/4 cups)
