- 3 medium sweet potatoes (about 1 pound each)
- 3/4 cup low-fat cottage cheese
- 3/4 cup diced Fuji apple (skin on)
- 3 tablespoons chopped fresh chives
- 1 piece (2 ounces) Parmesan cheese, half grated and half shaved
- 1/4 teaspoon coarse salt
- Freshly ground pepper, to taste
- Vegetable-oil cooking spray
- 1 tablespoon walnut oil
- 1/3 cup chopped toasted walnuts (about 1 ounce)

1. Preheat an oven to 450 degrees F (230 degrees C)
- 4 skinless, boneless chicken breast halves
- salt and freshly ground black pepper to taste
- 2 eggs
- 4 cups panko bread crumbs
- 1/2 cup grated Parmesan cheese
- 2 tablespoons all-purpose flour, or more if needed
- 1 cup olive oil for frying
- 1/2 cup prepared tomato sauce
- 1/4 cup fresh mozzarella, cut into small cubes
- 1/4 cup chopped fresh basil
- 1/2 cup grated provolone cheese
- 1/4 cup grated Parmesan cheese

- 5 cloves garlic, unpeeled
- 1 pkg active dry yeast
- 2 tsp sugar divided
- 1/4 c warm water
- 3 c flour
- 3 tbsp olive oil
- 1 1/2 tsp kosher salt
- 1 round tsp dried rosemary leaves
- 1 1/4 /c warm water
- Cornmeal
- 2 tbsp chopped olives
Broccoli-Quinoa Casserole w/Chicken & Cheddar

1. Heat a medium saucepan over medium-high heat
- 1 1/2 tablespoons canola oil
- 1 cup uncooked quinoa, rinsed and drained
- 1 1/4 cups water
- 1 (12-ounce) package microwave-in-bag fresh broccoli florets
- Cooking spray
- 12 ounces skinless, boneless chicken breast, cut into bite-sized pieces
- 1/2 teaspoon kosher salt, divided
- 1/2 teaspoon freshly ground black pepper, divided
- 1 1/2 cups chopped onion
- 6 garlic cloves, minced
- 1/2 cup 1% low-fat milk
- 2 1/2 tablespoons all-purpose flour
- 1 1/2 cups unsalted chicken stock
- 2 ounces Parmesan cheese, grated (about 1/2 cup)
- 1/2 cup canola mayonnaise
- 4 ounces sharp cheddar cheese, shredded (1 cup)
Sausage Apple Stuffing

In a large bowl, soak cubed stuffing in chicken broth
- 1 14 oz. Herb Seasoned Stuffing Cubed
- 6 Tablespoons butter
- 1/2 Cup finely chopped Italian parsley
- 1/2 Cup finely chopped celery
- 2 Cups chopped sweet onions
- 1 lb. Sage flavored pork sausage
- 1 1/2 Cups peeled, cored and chopped apples
- 2 Chopped cloves of garlic
- 1 Teaspoon dried thyme
- 3/4 Cups chopped pecans
- 2 Beaten eggs
- 1/2 Pint dairy sour cream
- 1/4 Cup red wine
- 2 Cups chicken broth
- Salt and pepper (to desired taste)

- 1/2 cup sugar
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground ginger
- 1/4 teaspoon salt

- 1/4 cup water
