Pesto Pizza

Heat oven to 425 In blender, process nuts, basil, parmesan, oil, salt and pepper
- 2 tbs lightly toasted pine nuts
- 1 c lightly packed basil leaves
- 1/2 c grated parmesan
- 1/4 c olive oil
- salt and pepper to taste
- 1 1/2 c mozzarella cheese
- 14 " prepared pizza crust
Sugar free Raspberry Swirl Cheesecake

To make the crust, place almond flour, Truvia and butter into a food processer and pulse until combined
- Crust:
- 1 c. Xylitol
- 4- 8 . oz blocks of light cream cheese
- 1 tsp. vanilla
- 3 extra large eggs (4 if using medium)
- 3 tsp. Truvia
- 1/2 c. sour cream
- 1/2 c. heavy cream
- 1.5 c. almond flour
- 1 tsp. Truvia
- 2 tbsp. butter
- 1 egg
- Raspberry Sauce:
- 1.5 c. heaping cups fresh raspberries
- 1 tsp. lemon juice
- 1 tsp. Truvia (or to taste)
- 1/4 tsp glucomannan
Spring Spritzers

Sangria: Stir together 2c chilled red wine, 1/2c Cointreau, 1/2 lime, and 1/2 orange
- Sangria:
- 2 c chilled red wine (i.e. Gamay)
- 1/2 c Cointreau
- 1/2 lime, thinly sliced
- 1/2 orange, thinly sliced and cut into wedges
- White wine:
- 2 c chilled dry white wine (i.e. Sauvignon Blanc)
- 1 1/2 c chilled sparkling lemonade
- Lemon wedge
- Rosy Raspberry:
- 1/4 c crushed raspberries
- 1 tbs and 1 tsp superfine sugar
- 3/4 tsp rose water (kalustyans.com)
- 2 c chilled rose wine
- 3 c chilled seltzer
- Honey vanilla:
- 2/3 c honey
- 1/2 c water
- 1 vanilla bean, split and scraped
- 1/4 c fresh lime juice
- 4 c chilled seltzer
- Green tea-cranberry:
- 1/3 c sugar
- 1/3 c water
- 4 green tea bags
- 2 c boiling water
- 1/2 c chilled unsweetened cranberry juice
- 3 c chilled seltzer
20-minute Chicken Enchiladas

Preheat broiler to high. Combine first 9 ingredients in a medium saucepan; stir with a whisk
- 1 cup chopped onion
- 1 cup unsalted chicken stock (such as Swanson)
- 1 tablespoon all-purpose flour
- 1 1/2 tablespoons chili powder
- 2 teaspoons ground cumin
- 3/4 teaspoon garlic powder
- 1/2 teaspoon crushed red pepper
- 1/4 teaspoon salt
- 1 (15-ounce) can unsalted tomato sauce
- 3 cups shredded skinless, boneless chicken breast (about 15 ounces)
- 1 (15-ounce) can unsalted black beans, rinsed and drained
- 12 6-inch) corn tortillas
- Cooking spray
- 3 ounces preshredded 4-cheese Mexican blend cheese (about 3/4 cup)
- 1 cup chopped tomato
- 6 tablespoons sour cream
Chicken Orzo Lettuce Wrap

•Add all of the ingredients except the pasta to a crock pot and cook on high for 4 hours
- 1 tin of cream of mushroom soup
- 1 tin of water
- 1 full bottle of greek salad dressing (we use Kraft)
- 1 tin of roasted tomatoes
- 1 tin of artichoke hearts
- 3 boneless skinless chicken breasts
- 1 box of orzo pasta
- 1 cup of dry white wine
- 1 head of romaine lettuce

Combine the warm water and yeast in a large bowl
- 1 C warm water (105-115 degrees F)
- 2 pkgs active dry yeast
- 1/2 C (1 stick) butter, melted
- 1/2 C sugar
- 3 eggs
- 1 tsp salt
- 4-4 1/2 C unbleached all-purpose flour
Peanut Noodles

1. Cook pasta in a large pot of boiling water until done
- 8 ounces spaghetti
- 1 bunch green onions, sliced (white parts only)
- 2 tablespoons sesame oil
- 1 teaspoon minced fresh ginger root
- 1/3 cup peanut butter
- 1/4 cup soy sauce
- 1/4 cup hot water
- 1 tablespoon cider vinegar
- 1 teaspoon white sugar
- 1/4 teaspoon crushed red pepper flakes

Rosemary Honey: Bring honey and rosemary to a simmer in a small saucepan
- Rosemary honey:
- 1 c light-flavored honey, such as clover
- 5 rosemary sprigs (3" each)
- Rosemary pound cake:
- 2 sticks unsalted butter, room temperature
- 2 3/4 c all-purpose flour
- 1 c cake flour (not self-rising)
- 1 tbs baking powder
- salt
- 2 1/4 c sugar
- 3 tbs finely chopped fresh rosemary
- 1 1/2 tsp pure vanilla extract
- 3 large eggs, plus 1 large egg white
- 1 c whole milk
- 1/4 c Rosemary honey sauce
