Basic Pie Dough

To make the dough by hand, in a large bowl, stir together the flour, sugar and salt
- 1 1/4 cups unbleached all-purpose flour
- 1 Tbs. sugar
- 1/4 tsp. salt
- 8 Tbs. (1 stick) cold unsalted butter, cut into 1/4-inch cubes
- 3 Tbs. very cold water
Lemon Risotto

Pucker up! This risotto is super-tangy but you'll still want to kiss it, it's so good
- 1 quart chicken stock
- 2 cups water
- 1 tablespoon extra-virgin olive oil
- 1 small to medium onion, chopped
- 2 cloves garlic, finely chopped or grated
- 1 cup Arborio rice
- 2 lemons
- 1/2 cup white wine
- 1/2 teaspoon sugar
- 2 tablespoons butter, cut into small pieces
- 1/2 cup grated pecorino cheese, a couple of handfuls
- 2 tablespoons slivered mint leaves
- A handful basil tops, shredded or torn
- Salt and freshly ground black pepper
Roasted Garlic, Feta, Walnut Dip

Preheat oven or toaster oven to highest setting
- 1 medium bulb garlic, end cut off, 1 clove reserved
- 1 tablespoon extra-virgin olive oil, plus some for drizzling
- 1 cup walnut halves, toasted
- 1 1/2 cups feta cheese, crumbles
- 1/2 cup milk
- 1 teaspoon dried oregano
- 1/4 cup flat-leaf parsley, a handful of leaves
- Freshly ground black pepper
- 1/2 teaspoon crushed red pepper flakes
- 1 large clove garlic, reserved from above, cracked away from skin
- 4 flat breads or pitas, cut into wedges and toasted
Pressure Cooker Risotto

Coarsely chop mushrooms and shallots, set aside
- 8 oz. fresh mushrooms
- 2 C arborio rice
- 4 C chicken broth
- 1/2 C dry white wine
- 2 T shallots
- 1/2 C grated parmesan cheese
- 3 T olive oil
- salt and pepper to taste
Beef Stroganoff

Crème fraîche is similar to sour cream but milder and sweeter, with a touch of nuttiness
- 3 Tbs. olive oil
- 1 1/2 lb. top sirloin, cut into thin strips about 1
- inch wide and 2 inches long
- Salt and freshly ground pepper, to taste
- 3 Tbs. unsalted butter
- 3 leeks, white and light green portions only,
- cleaned and finely chopped
- 1 lb. cremini mushrooms, brushed clean and
- sliced
- 1 Tbs. tomato paste
- 2 Tbs. all-purpose flour
- 2 1/4 cups beef stock
- 1/3 cup crème fraîche
- 2 tsp. Dijon mustard
- 2 tsp. fresh lemon juice
- Finely chopped fresh flat-leaf parsley for garnish
Pressure Cooker Brown Rice

- 3 anchovy fillets, rinsed and patted dry
- 3 Tbs. capers, rinsed
- 1 1/2 Tbs. coarsely chopped fresh flat-leaf
- parsley
- 3 garlic cloves, finely chopped
- 3 Tbs. fresh lemon juice
- 1/2 tsp. freshly ground white pepper

Chocolate Mousse

- 6 ounces chopped bittersweet chocolate, melted
- Nonstick vegetable oil spray
- 1 1/3 cups whole milk
- 8 large eggs, separated (See Note)
- 3/4 cup sugar
- Pinch of salt
- 16 ounces finely chopped bittersweet chocolate
- 2 tablespoons brandy
- 2 teaspoons vanilla extract
- 2/3 cup chilled whipping cream
- Unsweetened cocoa powder

- 1/2 C sugar
- Refrigerate overnight.

- Dressing:
- 3-4 kinds of greens
- mandarin oranges
- fresh strawberries, raspberries, blueberries, or blackberries
- crumbled blue cheese
- toasted sliced almonds
- 3/4 T salt
- 1 1/2 C sugar
- 1/4 C yellow onion
- 1 C salad oil
- 2/3 C red wine vinegar
- 2 T dijon
- 1/4 C sweet hot mustard
- 1/2 C balsamic vinegar
- 1/4 C poppyseeds
