Chocolate Raspberry Ganache Cake

OK! This is the best chocolate cake ever-- especially if you like moist, dense, and very chocolatey!!
- Cake:
- 2 cups all-purpose flour (Add 1/4 C more for higher altitudes)
- 2 1/2 cups sugar
- 3/4 cup unsweetened Dutch cocoa powder
- 2 teaspoons baking soda
- 1 teaspoon salt
- 1 cup canola oil
- 1 cup sour cream
- 1 1/2 cups water
- 2 tablespoons distilled white vinegar
- 1 teaspoon vanilla extract
- 2 eggs
- 2/3 C raspberry jam
- Raspberry Ganache (recipe follows)
- Ganache:
- 15 oz Peters Milk Chocolate, chopped
- 1/4 C cream
- 8 oz (2 sticks) butter, room temperature

- 1 garlic clove, minced
- 2 cups chicken broth

- 1/4 lb. lean bacon, rind removed, coarsely chopped
- 1 leek, including tender green portions, trimmed, carefully washed and thinly sliced
- 1 Tbs. all-purpose flour
- 2 cups evaporated milk
- 1 4 oz. cream cheese
- 1 lb. red potatoes, peeled or unpeeled, cut into 1/2-inch cubes
- 3/4 tsp. dried thyme
- Freshly ground pepper, to taste
- 1 Tbs. finely chopped fresh chives
- 1 Tbs. finely chopped fresh parsley

- 1 1/4 cups granulated sugar
- 1/4 teaspoon salt (if you use unsalted butter)
- 1 1/2 cups King Arthur Unbleached All-Purpose Flour
- 1 tablespoon ground cinnamon
- 6 tablespoons butter, melted
- FILLING
- 1 cup brown sugar, light or dark
- 1 1/2 tablespoons ground cinnamon
- 1 teaspoon unsweetened cocoa powder, Dutch-process or natural
- CAKE
- 3/4 cup butter
- 1 teaspoon salt (1 1/4 teaspoons if you use unsalted butter)
- 1 1/2 cups granulated sugar
- 1/3 cup brown sugar
- 2 1/2 teaspoons baking powder
- 2 teaspoons vanilla extract
- 3 large eggs
- 3/4 cup sour cream or plain yogurt

French Onion Soup

This soup's success depends on caramelizing the onions and leeks, a technique that takes time and patience
- 2 Tbs. vegetable or olive oil
- 4 large red onions, thinly sliced
- 1 ⁄4 tsp. sugar
- 4 leeks, including tender green portions,
- thinly sliced
- 2 garlic cloves, minced
- 8 cups beef or chicken stock or prepared broth
- 1 ⁄2 cup dry white wine
- 1 bay leaf
- 1 ⁄2 tsp. minced fresh thyme or 1⁄4 tsp.
- dried thyme
- Salt and freshly ground pepper, to taste
- 12 baguette slices, each 1⁄4 inch thick
- 3 ⁄4 cup shredded Gruyère or Comté cheese

- 3 Golden Delicious apples, cored and cut

- Tiny splash of brandy or cognac
- 1 can (35 oz.) plum tomatoes, chopped
