Broccoli Bacon Salad

Mix ingredients and chill
- 1 clove garlic, minced
- 1/4 cup low-fat mayonnaise
- 1/4 cup reduced-fat sour cream
- 2 teaspoons cider vinegar
- 1 teaspoon sugar
- 4 cups finely chopped broccoli crowns , (see Tip)
- 1 8-ounce can sliced water chestnuts, rinsed and chopped
- 3 slices cooked bacon, crumbled
- 3 tablespoons dried cranberries
- Freshly ground pepper , to taste
Tomatoes stuffed with Chicken Salad

- 6 large tomatoes
- 2 cups cooked and cubed chicken
- 1/2 cup minced red bell pepper
- 1/2 cup corn, drained
- 1 1/2 tablespoons minced red onion
- 1/4 cup plus 2 tablespoons olive oil
- 1/4 cup fresh lemon juice
- 1 tablespoon chopped fresh Italian flat-leaf parsley
- 1 tablespoon Dijon mustard

Artichoke Dip with Mushrooms

- 3 chopped green onions
- 1 can artichoke hearts in water (drained)
- 1 8 oz package of cream cheese (reduced-fat works fine)
- 1 cup mayonnaise
- 1 sm carton fresh white button mushrooms, sliced (1 small can can work if you don't have fresh)
- 1 cup grated Jack cheese
- 1 cup grated parmesan (not the powder kind)
- 1/4 tsp garlic powder
- Juice from 1/2 lemon

- 16 oz. dried black beans
- 1 tablespoon of lard, bacon grease, peanut oil or canola oil
- 1 onion, diced
- 4 cloves of garlic, minced
- 1 carrot, diced
- 4 chipotles in adobo, chopped
- 1 tablespoon of epazote or 2 sprigs fresh
- 1/2 teaspoon of cumin
- 1/2 cup cilantro. chopped
- 1 tablespoon tomato paste
- 1/4 cup lime juice
- Six cups of water
- Two cups of chicken or vegetable broth
- Salt to taste

- 16 mussels
- 12 large shrimp
- 1 3/4 cups cider or dry white wine
- 3 T butter
- 1 garlic clove, crushed
- 2 shallots, finely chopped
- 2 celery stalks, finely chopped
- 1 large leek, white part only, thinly sliced
- 3 cups small chestnut mushrooms, sliced
- 1 bay leaf
- 10 oz salmon fillet, cut into chunks
- 13 oz sole fillet, chunked
- 1 1/4 cups heavy cream
- 3 T finely chopped parsley

Cut hole in top of bread loaf (about 5") & set aside as "top" for bread
- 1 loaf good bread (round, "boule")
- 1/4 lb. butter
- 1 bunch of green onions, chopped
- 12 cloves fresh garlic, minced finely
- 8 oz. cream cheese at room temp.
- 16 oz. sour cream
- 12 oz. Cheddar cheese, grated
- 1 can (10 oz.) artichole hearts, drained & cut in quarters (water packed, not marinated).
- 1 French bagette, sliced thinly, but not all the way through.
Wintery Spring Rolls

- Ginger Onion Paste:
- 2 spring onions, finely sliced
- 2 red spring onions, finely sliced (or equiv. red onion / shallots)
- 3 tablespoons grated, peeled ginger
- 1/2 teaspoon fine grain sea salt
- 6 tablespoons sunflower oil
- Brown Sugar Tofu & Mushrooms:
- 12 ounces extra firm tofu
- 3 medium cloves garlic
- 1/2 teaspoon fine grain sea salt
- 4 teaspoons natural cane sugar (or brown sugar)
- 2 tablespoons sunflower oil
- 8 ounces mushrooms, brushed clean, sliced 1/4-inch thick
- For spring roll assembly:
- Ginger Onion Paste (above)
- Brown Sugar Tofu & Mushrooms (above)
- crisp, crunchy lettuce (baby gems / romaine)
- 1 small bunch fresh cilantro or other herbs, well washed / dried
- ~1 dozen rice paper wrappers
