- 5-6 Granny Smith apples, peeled, cored and thinly sliced
- For the cheesecake:
- 8 oz. cream cheese
- ¼ cup sugar
- 1 tsp. vanilla extract
- 1 large egg
- 1 tbsp. freshly squeezed lemon juice
- For the topping:
- ¾ cup heavy cream
- 3-4 tbsp. confectioners’ sugar
- ¼-½ cup caramel
- Chopped pecans
