Grilled Sturgeon with Mushroom Saute

Clean the grill well before getting it hot, this will help insure the fish will not stick while cooking
- The Grilled Sturgeon:
- 4 sturgeon fillets (6 to 7 ounces)
- 1 tablespoon minced fresh garlic
- 2 tablespoons olive oil
- 1 teaspoon course ground black pepper
- pinch of kosher salt or sea salt
- The mushroom & thyme saute:
- 1/2 cup button mushrooms (sliced)
- 1/2 cup shitake mushrooms (sliced)
- 1/2 cup oyster mushrooms (sliced)
- 1/4 cup of shallots (sliced)
- 2 tablespoons extra virgin olive oil
- 1 tablespoon butter
- 1 teaspoon fresh thyme
- 1/4 cup chicken or vegetable stock (canned)
- 2 tablespoons dry white wine

- Combine the vinegar, lemon juice, garlic, salt, and pepper in small bowl. Gradually add the oil, whisking until the dressing is thick.
- Salad
- to to large bowl, combine the chicken, arugula, avocado, fennel, feta, sun-dried tomatoes, olives, salt, and pepper. Add the dressing to the salad and toss to coat.
- Fill the lettuce leaves with the salad. Arrange the lettuce leaves on a platter and serve.
Smoky Tomato-Greek Yogurt Crema

- 3 plum tomatoes, halved
- Canola oil
- Kosher salt and freshly ground black pepper
- 2 tablespoons red wine vinegar
- 2 teaspoons chipotles in adobo
- 3 cloves garlic, chopped
- 1 small Spanish onion, roughly chopped
- 1/4 cup fresh cilantro leaves
