Sweet Potato Wedges

Peel and cut into wedges. Brush with oil and sprinkle with spices
- 4 large sweet potatoes
- 1 Tbsp. vegetable oil per potato
- 1 tsp. thyme
- 1/2 tsp. cracked rosemary
- 1/4 tsp. ground cumin
- 1/4 tsp. pepper
- 1/4 tsp. kosher salt
No-Cook Strawberry Freezer Jam

Wash and hull the berries; crush them completely, a few at a time (should end up with 2 cups)
- 4 cups ripe strawberries
- 4 cups granulated sugar
- 1 box Sure Jell
- 3/4 cup water
Pasta e Fagioli

In a medium heavy pot, heat oil over medium heat
- 1 Tbsp. extra-virgin olive oil
- 3 celery stalks, diced medium
- 2 carrots, diced medium
- 1 small red onion, diced medium
- 2 garlic cloves, minced
- Coarse salt and ground pepper
- 1 sprig oregano
- 1 can (28 oz) diced tomatoes
- 2-1/2 cups low-sodium vegetable broth
- 1 Parmesan rind (optional), plus 1/4 cup shaved Parmesan for serving
- 1 cup small pasta, such as ditalini
- 1 can (15.5 oz) cannellini beans, rinsed and drained
Basic Basil Pesto

On a cutting board, sprinkle 1/4 tsp
- Coarse salt and ground pepper
- 1 garlic clove, peeled
- 3/4 cup toasted pine nuts
- 3 cups packed fresh basil leaves
- 1/2 cup extra-virgin olive oil
- 1/4 cup freshly grated Parmesan
Teriyaki Marinade

Mix all ingredients together
- 1 cup soy sauce
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 2 chopped green onions
- 2 tbsp. oil
- bit of garlic and black pepper
7-Layer Pea Salad

Layer all salad ingredients,adding salt and pepper as desired
- Salad:
- 1 head lettuce, shredded
- 1/2 cup chopped onions
- 1/2 cup Parmesan cheese
- 7 boiled eggs (I used 3)
- 1/2 cup chopped celery
- 1 bag frozen peas, thawed
- 8-12 strips bacon, cooked and crumbled
- Dressing:
- 2 cups salad dressing (I used Hellman's)
- 2 Tbsp. sugar
- 1 tsp. white vinegar
- Salt and pepper to taste
Pimento Cheese Spread

MAKE THE MAYO MIXTURE Stir together mayo, pimiento, Worcestershire sauce, onion and red pepper until blended
- 1-1/2 cups of high-quality mayonnaise (Hellman's or Duke's)
- 1 - 4 -oz. jar diced pimiento, drained
- 1 tsp. Worcestershire sauce
- 1 tsp. finely grated onion
- 1/4 tsp. ground red pepper
- 1 cup chopped pecans
- 1 - 8 oz. block extra-sharp Cheddar cheese.
- 1 - 8 oz. block sharp Cheddar cheese
Cava Sangria

Press mint leaves against aides of a large pitcher with back of a wooden spoon to release flavors
- 8 large mint leaves
- 1 (750 milliter) bottle Cava sparkling wine, chilled
- 3/4 cup white grape juice, chilled
- 1/2 cup sliced fresh strawberries
- 1/4 cup orange liqueur
- Garnish: fresh sugar cane sticks
Sweet Tea Spritzer

- 2 cups cranberry juice
- 1 cup sweet tea vodka
- 1/2 cup fresh lemon juice
- 5 cups ice cubes
- 1 - 12 oz. can lemon lime soda
