Chicken-Pretzel w/ Cheddar Sauce

Pound chicken. Crush pretzels
- 4 boneless chicken breasts
- Salted pretzels
- 1 T fresh thyme
- 2 eggs
- 2 T butter
- canola oil
- 1 T flour
- 2 c milk
- 2 c grated sharp cheddar
- 1 c extra sharp white cheddar
- 2 heaping T spicy brown mustard
Zuccchini Brownies

Preheat oven to 350 degreees
- Frosting:
- 1/2 c vegetable oil
- 1 1/2 c sugar
- 2 t vanilla extract
- 2 c flour
- 1/2 c unsweetened cocoa powder
- 1 1/2 t baking soda
- 1 t salt
- 2 c shredded zucchini
- 1/2 c chopped walnuts
- 6 T unsweetened cocoa powder
- 1/4 c margarine
- 2 c confectioners sugar
- 1/4 c milk
- 1/2 t vanilla extract
Sweet Potato and Apple Baked Side Dish

Preheat oven to 350 deg. In buttered ramekins sprinkle some of the brown sugar in the bottom
- 3 sweet potatoes (peeled and sliced)
- 3 Ginger Gold apples (peeled and sliced)
- 1 Tbsp flour
- 1/2 cup brown sugar
- 1 tsp cinnamon
- 1 Tbsp butter
Pecan Supremes

Preheat oven to 300 deg. Combine flour, soda, salt & oats
- 2 c flour
- 1/2 t baking soda
- 1/4 t salt
- 3/4 c quick oats
- 3/4 c dark brown sugar
- 1/4 c white sugar
- 1 c butter
- 2 eggs
- 2 t vanilla extract
- 1 c chopped pecans
- 1 c semisweet chocolate chips
Crab Tomato Bisque Soup

Prepare onion and celery, peel and chop onions to a fine dice
- 1 lb. King Crab leg meat (in chunks)
- 1 medium onion, finely diced
- 2 celery stalks, finely diced
- 2 cans tomato bisque soup
- 2 cans milk
- 2 T butter
Baked Tillapia with Onions & Peppers

Preheat oven to 425. Spray small glass or ceramic casserole dish with nonstick spray
- 2 or 3 medium-sized Tilapia filets
- (for best results, use fish that is uniformly thick)
- 1/2 T olive oil (or less, depending on your pan)
- 1/2 cup very finely diced red pepper
- 1/4 cup very finely diced red onion (or sweet white onion)
- 1-2 T mayo or lite mayo (do not use fat free)
Chicken Tortilla Soup

1. Preheat a medium soup pot over medium-high heat and add the EVOO (twice around the pan)
- 2 TBS Extra Virgin Olive Oil (EVOO)
- 1 1/2 Lbs. Chicken Tenders (salt & fresh ground pepper)
- 3 Garlic cloves, chopped
- 1 Green Bell pepper, cored, seeded and chopped
- 1 Large Onion, chopped
- 1 Jalapeno, minced
- 2 Celery ribs, finely chopped
- 1/2 TBS Ground Cumin (half a palmful)
- 1 TBS Ground Coriander (a palmful)
- 2 Cups Yellow Corn Tortilla Chips (about 4 handfuls)
- 2 Tsp. Hot sauce
- 1 Qt. Chicken stock or broth
- 1/2 Cup Sour Cream (for garnish)
- Zest and Juice of two Limes
- 1/2 Cup Fresh Cilantro leaves (a few handfuls), chopped
- 4 Scallions, white & green parts, thinly sliced
Shrimp Chowder

Heat oil, add pepper, celery & onion
- 1 T vegetable oil
- 1/3 c chopped green pepper
- 1/3 c chopped celery
- 1/4 c chopped onion
- 16 oz. diced tomatoes
- 1/2 c water
- 1 clove minced garlic
- 1 bay leaf
- 2 T parsley
- 1/2 t dill
- salt, pepper, tabasco
- 1/4 lb shrimp
Holiday Potatoes

Mix all ingredients together and place in a baking casserole
- Optional:
- 8-10 cooked white or yellow potatoes
- 1 8 oz. pkg. cream cheese, softened
- 1 cup sour cream
- salt & pepper to taste
- 1 tsp garlic salt
- 1/4 cup finely-grated onions
Oriental Salad Dressing

Put all ingredients in a shaker next
- 1/4 cup of veg.oil
- 2 tbl of white vinegar
- 1 tbl spoon of sugar
- 1/4 tsp spoon of salt
- 1/4 tsp of hot sauce
- 1/8 tsp of pepper
- 1 tbs of parsley
