Minted white chocolate balls

1. Stir together first 6 ingredients then shape into 32 balls
- 56 vanilla wafers, crushed (less than an 11 ounce box)
- 1 cup chopped pecans, toasted
- 1/2 cup powdered sugar
- 2 tablespoons unsweetened cocoa
- 4 1/2 teaspoon light corn syrup
- 6 tablespoons peppermint schnapps
- 3 cups white chocolate morsels
- Crushed peppermint candies for coating
Green Beans with Sweet Onion Vinaigrette

Stir together onion, vinegar, mustard, 3/4 teaspoon salt, and 1/2 teaspoon pepper in a large bowl
- 1 cup finely chopped sweet onion
- 1 tablespoon red-wine vinegar
- 1 tablespoon grainy Dijon mustard
- 2 1/2 pounds green beans, trimmed
- 2 tablespoons extra-virgin olive oil
- 1/3 cup finely chopped flat-leaf parsley
Caramel Corn (Louise's)

Melt butter, add sugar, syrup & salt
- l c melted butter
- 2 c brown sugar
- 1/2 c light corn syrup
- 1 t salt
- 1 t vanilla
- 1/2 t baking soda
- 6 c popped corn (1 c unpopped)
- peanuts (if desired)
Coconut Snowball Crisps

Preheat oven to 200 deg. Line 2 cookie sheets with parchment paper
- 3 large egg whites
- 1 pinch salt
- 1 c conf. sugar
- 2 c sweetened shredded coconut
- 2 c rice krispies
- 1/4 c cornstarch
Fruit Pizza

Preheat oven to 350 deg. Coat 12" pizza pan with cooking spray
- 1 tube refrigerated sugar cookie dough
- 1/2 c conf. sugar
- 1 pkg. cream cheese, room temp
- 1 t grated orange zest
- 1/2 t vanilla
- 1 1/4 c strawberries
- 3 kiwi fruit
- 1/2 c blueberries
- 3 kiwi fruit
- 1/2 c blueberries
- 1 T apple juice or water
Scallops, sauteed

Melt butter in saucepan. Add garlic and whole sprigs of rosemary
- 1/4 c butter
- 2 cloves crushed garlic
- 2 sprigs fresh rosemary
- 1 lb scallops
Pie Crust, Flaky

Whisk the flour and salt together in a medium size bowl
- 1 1/4 c all-purpose flour
- 1/4 t salt
- 1/2 c margarine, chilled
- 3 T ice water
Caramel-Apple Biscuits

Heat oven to 350 deg. Cook butter & caramel topping until melted & bubbly
- 1/4 c butter
- 1/2 caramel ice cream topping
- 1/4 c dark brown sugar
- 6 c sliced peeled Granny Smith apples
- 1/2 c chopped pecans
- 1 can Pillsbury Flaky Butter Biscuits
Fruit with Rum Drizzle

Soak wooden skewers in hot water for 30 mins
- 8-10 6" skeweres (wood or metal)
- 2 bananas, cut into 1/2" slices
- 1/2 pineapple, peeled & cut into 1"
- pieces
- 2 star fruit, cut into 1/2" pieces
- 2 T sugar
- 1/4 t ground cinnamon
- 2 T dark rum
Limoncello

Wash the lemons in hot water & clean with vegetable wash and scrub vigorously
- 1 bottle Everclear (750 ml)
- 1 bottle vodka (750 ml)
- 20 organic lemons
- 4 c sugar
- 4 c water
