Coconut Snowball Crisps

  • 3 large egg whites
  • 1 pinch salt
  • 1 c conf. sugar
  • 2 c sweetened shredded coconut
  • 2 c rice krispies
  • 1/4 c cornstarch



Step 1

Preheat oven to 200 deg. Line 2 cookie sheets with parchment paper. Electric mixer with whisk, beat egg whites & salt until thick & foamy. Sprinkle in conf. sugar, then beat at high speed until firm & glossly (5 mins). Toss together coconut, cereal & corn starch. Using spatula, fold into egg mix until combined. Drop rounded teaspoons about 1" apart on cookie sheets. Bake until firm (1 hr) Let cool completely.
