Oversized Mozzarella Arepas with Summer Veggies

To make the vegetables, bring a pot of water to the boil
- For the Arepas:
- 1 cup sugar snap peas, washed and trimmed
- 1 pound thin asparagus, washed, trimmed, and cut into 2-inch lengths or string beans, washed, trimmed, and cut into 2-inch lengths
- 1 small zuchinni, trimmed and cut very thinly (on a mandolin if possible)
- 1 large shallot, thinly sliced
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 1/2 teaspoon salt
- freshly ground pepper
- 1 1/2 cup masa harina (fine corn flour)
- 1 teaspoon salt
- 3 ounces fresh mozzarella, diced
- 2 tablespoons neutral oil
Sweet Potato Spoon Bread

Spoon bread is a cross between grits and corn bread, with a lovely dense pudding-like texture
- 4 tablespoons (1/2 stick) unsalted butter, melted
- 2 sweet potatoes (about 1 lb.)
- 2 1/2 cups milk
- 1 tablespoon fresh thyme
- 1 tablespoon light brown sugar
- 2 teaspoons coarse sea salt
- 1/2 teaspoon freshly ground black pepper
- 1 cup finely ground white or yellow cornmeal
- 4 eggs, separated
- 2 teaspoons baking powder

- 8-10 thick slices French, Italian bread (can also use brioche)
