- For the ribs:
- 8 cups chicken stock
- 1 ⁄4 cup soy sauce
- 4 garlic cloves, peeled
- 1 6-inch piece fresh ginger, peeled and cut into 4 pieces
- 1 medium carrot, diced (about 1⁄2 cup)
- 1 medium onion, diced (about 1 cup)
- 2 stalks celery, diced (about 3⁄4 cup)
- 2 racks baby back pork ribs, about
- 4 pounds total (racks cut in half if using a Dutch oven)
- For the glaze:
- 1 tablespoon canola oil
- 2 tablespoons chopped garlic
- 2 tablespoons chopped peeled fresh ginger
- 1 ⁄4 cup sliced scallions
- 1 ⁄4 cup soy sauce
- 1 ⁄2 cup hoisin sauce
- 1 cup dark corn syrup
- 1 ⁄4 cup ketchup
- 11 ⁄2 teaspoons Chinese five-spice powder
- 11 ⁄2 teaspoons sambal oelek chile paste

- 1 flatbread, pita or wrap
- 1/4 cup Feta Cheese w Basil/Tomato
- 1/4 cup onions, raw, sliced
- 1/4 cup red peppers, raw, sliced
- 1/4 cup cucumbers, thinly sliced on the diagonal
- 2 leaves of romaine lettuce
- 4 T Roasted Garlic Hummus

- Salad dressing:
- 2 pears, sliced thinly on a mandoline
- 2 beets, roasted
- 2 ounces cheese (goat, cheddar, parmesan)
- 2 ounces toasted nuts (hazlenuts, pecans or pine nuts)
- 2 handfuls mache (can substitute any salad green you like)
- 1/4 cup sherry vinegar
- 3/2 cup extra virgin olive oil
- 1 clove garlic, minced
- 1 tsp Dijon mustard
- 1 tbs hazelnut oil
- salt & pepper to taste

- 32 chocolate wafer cookies (such as Nabisco Famous Chocolate Wafers, enough for 1 1/3 cups cookie crumbs)

- 6 tablespoons melted butter, plus 2 tbsp. butter cut into small cubes
- 6 large egg yolks
- 3 1/4 cups milk
- 1/4 cup cornstarch
