My version of a creamy fall soup
- 2 medium, red sweet potatoes, peeled and cut into logs
- 1 Granny Smith apple, peeled, seeded and cut into logs
- 2 cloves garlic, peeled
- 2 tsp. light oil
- 1 small onion diced
- 1 celery stalk diced
- 3-4 cups chicken broth, vegetable broth or water
- salt and pepper to taste
- 1/2 cup sour cream, yogurt or lightly whipped heavy cream combined with 1/2 teaspoon maple syrup
