Babycakes Sugar Cookies

1. Preheat oven to 325° F
- 2 1/4 cups rice flour, plus more for dusting
- 1 1/3 cup vegan sugar
- 1/4 cup arrowroot
- 1 tsp baking soda
- 1 tsp xanthan gum
- 1 tsp salt
- 3/4 cup melted coconut oil
- 1/3 cup unsweetened applesauce
- 2 tbs vanilla extract
- 2 tsps lemon extract
- 1/3 cup cold water
Charred Snow Peas, Pickled Mushrooms, and Water Chestnuts

Michael Schulson's restaurant "Izakaya" at The Borgata in Atlantic City is one of my favorites
- For the pickled mushrooms:
- 1/2 cup fresh beach or enoki mushrooms
- 1/2 cup Japanese vinegar
- 1 cup water
- 1/2 cup sugar
- 2 tablespoons salt
- 1 clove garlic, whole
- 2 sprigs thyme
- For the dish:
- Oil as needed for saute
- 1 cup snow peas, cleaned and blanched
- 1 teaspoon ginger, peeled and finely chopped
- 1/2 teaspoon fresh red finger chili, thinly cut on the bias
- 1/2 cup of the pickled mushrooms
- 1/4 cup water chestnuts, peeled and diced
- White soy sauce to taste
Satsuma-Cranberry Vodka

- 1 cup fresh cranberries
- 1 cup vodka
- 1/2 cup sugar
- 4 whole Satsumas
- 3/4 cup Grand Marnier
- 1/4 cup fresh lime juice

- 2 pounds green beans, trimmed
- 6 slices bacon
- 2 shallots, sliced
- 2 tablespoons cider vinegar
- 2 tablespoons whole-grain mustard
- 2 tablespoons olive oil

1. MAKE THE PASTRY: In a food processor, pulse the flour, sugar and salt

- 2 * 2 cups all-purpose flour
- 1 * 1 tablespoon sugar
- 1/2 * 1/2 teaspoon salt
- 1 1/2 * 1 1/2 sticks (6 ounces) cold unsalted butter, cut into small pieces
- 1/4 * 1/4 cup ice water
- APPLE FILLING AND STREUSEL TOPPING
- 1/2 * 1/2 cup plus 2 tablespoons all-purpose flour
- 1/4 * 1/4 cup walnuts, finely chopped
- 1/4 * 1/4 cup granulated sugar
- 2 * 2 tablespoons dark brown sugar
- 1/2 * 1/2 teaspoon salt
- 1/8 * 1/8 teaspoon ground cinnamon
- 7 * 7 tablespoons unsalted butter
- 1 * 1 cup pure maple syrup, plus more for serving
- 1 * 1 vanilla bean, split and scraped
- 5 * 5 Granny Smith apples—peeled, cored and sliced 1/2 inch thick
- 1 * 1 large egg, beaten with 1 tablespoon of water
- * Vanilla ice cream, for serving

Summer Fresh Spinach Salad

Super easy recipe adapted from Kraft Foods
- 2 pkg. (9 oz. each) baby spinach leaves
- 6 small fresh peaches (1-3/4 lb.), thinly sliced
- 1 Red onion, halved, thinly sliced
- 1 cup coarsely chopped pecans, toasted
- 1 cup shredded parmesan cheese
- Light Raspberry Vinaigrette Dressing (your choice)
Homemade Minestrone Soup

This is hands down the best minestrone soup I've ever tasted
- 1 Tbs. olive oil
- 1/2 tsp. dried oregano
- 1/2 tsp. dried basil
- Roughly 1/2 tsp. salt, or to taste
- 1 medium onion, diced (1 1/2 cups)
- 1 large or 2 medium carrots, sliced into rounds (1 cup)
- 3 stalks celery, sliced (1 cup)
- 6 cloves garlic, minced (2 Tbs.)
- 1/2 cup sliced sun-dried tomatoes
- 1 15-oz. can white beans, rinsed and drained (or 1 1/2 cups cooked from scratch white beans)
- 1 cup fresh or frozen peas or green beans, cut into 1-inch lengths
- 2 Tbs. white wine vinegar
- 3 1/2 cups water plus reserved sun-dried tomato soaking water
Chocolate Risotto Pudding

- 1 cup sugar
- 2 vanilla beans, split lengthwise
- 4 tablespoons butter, divided
- 2 cups Arborio rice
- 1/4 pound chopped bittersweet chocolate
- 2 tablespoons chopped hazelnuts
- Small piece white chocolate, to shave for garnish
Zesty Chile Tiger Prawns

This stir-fry is full of flavour and can be served up in a matter of minutes
- 2 tablespoons groundnut oil
- 5 cloves garlic, finely chopped
- 1 medium red chile, finely chopped
- 7 ounces raw Tiger (jumbo shrimp) or King prawns (langoustines), shelled and deveined
- 1 tablespoon Shaohsing rice wine or dry sherry
- Juice of 1 lime
- 3 ounces French beans (green beans), chopped into 1/2-inch lengths
- Pinch sea salt
- 1 teaspoon dried chile flakes
