- 1 envelope active dry yeast (2 1/4 teaspoons)
- ¾ cup plus 2 tablespoons warm water
- 1 tablespoon sugar
- 2 ¾ cups all-purpose flour, plus more for dusting
- 8 ounces aged Gouda (preferably 4 years), shredded (2 cups)
- ½ cup walnuts, finely chopped
- 1 teaspoon kosher salt
