Red Velvet Bars

Directions Set up grill for indirect cooking over medium heat
- For the Cake:
- 1 box (18 1/4 ounces) German chocolate cake mix
- 1 stick butter, softened
- 1 egg
- 1 ounce red food coloring
- For Cream Cheese Layer:
- 16 ounces cream cheese, softened
- 1/2 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
Eggplant Bolognese

1.In a Dutch oven or large (5-quart) saucepan with a lid, heat 6 tablespoons oil over medium-high
- 8 tablespoons olive oil
- 1 large eggplant (about 1 pound), peeled and cut into 1/2-inch pieces
- 1 medium onion, finely chopped
- 1 green bell pepper (ribs and seeds removed), finely chopped
- 1 zucchini (about 8 ounces), quartered lengthwise, sliced inch thick crosswise
- 1 garlic clove, minced
- coarse salt and ground pepper
- 1 pound ground beef chuck
- 1 can (28 ounces) crushed tomatoes
- 1 tablespoon dried oregano
- 1 pound rigatoni or other short tubular pasta
- Parmesan cheese, shaved (optional)
Valentine Graham Crackers

Preheat oven to 350F Line baking sheets with parchment paper
- 1 3/4 cup(237grams)whole wheat pastry flour
- 1/3 cup +1tbl(54grams) all purpose flour
- 1/3 cup+1tbl (85grams) packed brown sugar
- 3/4 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 6 tbl(85grams)butter, chilled, cut into cubes
- 2 tbl(28grams) milk
- 1 tbl(14grams) orange juice
- 1/4 cup(65grams) honey
- 1 tsp vanilla extract
Caprese Salad

Layer alternating slices of tomatoes and mozzarella, adding a basil leaf between each, on a large, shallow platter
- 3 vine-ripe tomatoes, 1/4-inch thick slices
- 1 pound fresh mozzarella, 1/4-inch thick slices
- 20 to 30 leaves (about 1 bunch) fresh basil
- Extra-virgin olive oil, for drizzling
- Coarse salt and pepper
Sweet Ricotta Pastries

Dough, in muffin cups and in strips on baking sheet, can be chilled, covered with plastic wrap, up to 1 day
- For filling:
- 1/2 cup whole milk
- 2 (3-by 1-inch) strips orange zest
- 1 large egg yolk
- 3 tablespoons sugar
- 1 tablespoon cornstarch
- 1/2 teaspoon pure vanilla extract
- 1/2 pound fresh ricotta
- 3/4 teaspoon orange-flower water
- 2 tablespoons finely chopped candied citron
- For pastry:
- 2 1/4 cups all-purpose flour
- 6 tablespoons sugar
- 1/2 teaspoon salt
- 2 sticks cold unsalted butter, cut into pieces
- 1/2 teaspoon grated orange zest
- 2 large egg yolks
- 2 tablespoons cold water
- 1 large egg beaten with 1 tablespoon water
Marshmallow Peanut Butter Dip

1. COMBINE first four ingredients in small bowl
- 1/2 cup marshmallow creme
- 1/4 cup Jif® Creamy Peanut Butter
- 1 teaspoon lemon juice
- 2 teaspoons water
- Fresh fruit or graham cracker sticks
Pistachio-Honey Torrone

You can substitute almonds or hazelnuts for the pistachios
- Edible wafer paper, enough for 2 layers in pan
- 1/3 cup cornstarch
- 3 large egg whites
- 1 cup honey
- 3 cups granulated sugar
- 1/2 cup confectioners' sugar
- 2 cups shelled raw pistachios
Mediterranean Couscous

Put the couscous in a large mixing bowl
- 1 1/2 cup instant couscous
- 2 cups low-sodium chicken stock
- 4 ounces dried apricots, about 12, finely diced
- Kosher salt and freshly cracked black pepper
- 1/4 cup pitted kalamata olives, chopped
- 3 scallions, thinly sliced
Spicy Indian Dahl

A spicy Indian lentil soup that can be enjoyed with rice or Naan, the Indian bread
- 3 onions, chopped
- 3 jalapeno peppers, seeded and minced
- 1 tablespoon ground cumin
- 1 tablespoon ground coriander seed
- 6 cloves garlic, minced
- 2 tablespoons olive oil
- 1 cup water
- salt to taste
- 1 cup red lentils
- 2 tablespoons ginger root, minced
- 1 teaspoon mustard seed
- 2 tablespoons chopped fresh cilantro
- 4 tomatoes, chopped
