- 1/2 teaspoon cayenne pepper
- 1/4 cup fresh lemon juice
- 1/2 cup plus 2 tablespoons pure olive oil
- 8 skinless chicken thighs
- 2 tablespoons anise seeds
- 4 garlic cloves, coarsely chopped
- 1/2 teaspoon loosely packed saffron threads
- 2 teaspoons sweet paprika
- Salt
- 1 cup shelled fava beans
- 1/2 cup fresh peas, preferably English peas
- Freshly ground black pepper
- 2 tablespoons unsalted butter
- 1 pound button mushrooms, halved
- 8 scallions, thinly sliced
- 2 thyme sprigs
- 1 tablespoon all-purpose flour
- One 12-ounce bottle Belgian beer
- 1/2 cup heavy cream
- 1/4 cup coarsely chopped flat-leaf parsley
Crab Cake with Taragon Sauce

- Tarragon Sauce:
- (refrigerate)
- 1/4 cup mayo
- 1/4 cup sweet relish
- 3 tbsp milk
- 1 tbsp mustard
- 1 tsp tarragon
- 1 tbsp parsley
- Crab Cakes:
- 1 lb crabmeat
- 1/2 cup bread crumbs
- 1/4 cup mayo
- 3 tbsp green onion
- 1 tbsp mustard
- 1 egg white
- 4 drops red pepper sauce
Caesar Chicken Salad

Blend ingredients. 1/2 dressing
- 6 tbsp. olive oil
- Juice from 2 lemons (about 1/2 cup)
- 1/2 tsp worcestershire sauce
- 3 cloves garlic, pressed
- 1/4 cup grated Parmesean
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 4 boneless chicken breasts
- 4 hearts of romaine lettuce
- 1 loaf prepared garlic bread
Roasted Butternut Squash Soup

- 2 tablespoons extra-virgin olive oil
- 1/2 cup (1/4-inch) diced onion
- 1/4 cup (1/4-inch) diced celery

- 1 cup flour
- 1 cup sugar

- 1/2 cup milk
- 1/3 cup unsalted butter, melted

- 1/2 cup packed brown sugar
- 2 tbsp. cornstarch
- 1/4 tsp. ground ginger
- 1 tsp. cinnamon
- 1/8 tsp. nutmeg
- 1 1/4 cups water

- 6 cups sliced peeled Granny Smith apples
- 1 tbsp. lemon juice, fresh squeezed
- 1 tsp. lemon zest
- 1 tbsp. unsalted butter
- 1 tbsp. sugar

- Fill a pitcher 1/3 full with ice cubes.
- Add 5 cups chilled cranberry flavored vodka,

- 1/2 tsp. salt
- 1 1/2 lbs. chicken tenders
- 2/3 cup butter, melted
- 1/4 cup white wine or chicken broth
- 1/4 cup green onion, chopped
- 1/4 cup dried parsley
Florentine Lasagna

Steam spinach until tender; press out excess moisture and chop coarsely
- 1 pound fresh spinach
- 1 pound fresh mushrooms, chopped coarsely
- 1 cup onion, chopped
- 1 clove garlic, minced
- 2 tablespoons olive oil
- 3 cups ricotta cheese
- 1 2/3 cups Parmesan cheese, divided
- 1 egg
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 3/4 teaspoon dried basil
- 3/4 teaspoon dried oregano
- 16 lasagna noodles
- 4 1/2 cups mozzarella cheese, shredded
- Marinara sauce or tomato-cream sauce; as desired

Endive Salad with Apples, Walnuts & Blue Cheese Crumbles

- 3 heads of Belgian endive, cut into chunks
- 1 thinly sliced tart apple
- 1 cup of large pieces of walnuts
- 1 cup of crumbled blue cheese
- 1/4 cup of olive oil
- 1/4 cup of white balsamic vinegar (Important: use white balsamic vinegar. The other will make a dark dressing.)
- Salt and pepper to taste
