Grilled Vegetable Salad

- More Ingredients (Not to be grilled):
- 3/4 pound asparagus, washed
- 2 ears of corn, shucked
- 1 red onion, sliced into 1/2 inch slices
- 2 small zucchini, cut lengthwise into 1/2 inch slices (very small squash can be cut down the middle and grilled in halves)
- 2 bell peppers (red, yellow or green), cut in half with seeds and whitish ribs removed
- 2 tablespoons melted butter
- 2 tablespoons olive oil
- Kosher salt and fresh ground black pepper
- 1 avocado, halved, pitted and then diced
- 2-3 Roma tomatoes, cored and cut into large pieces
- 12-16 ounces of mixed baby greens (or your favorite greens)
- 1/3-1/2 cup freshly grated Asiago or Parmesan cheese

- 1 teaspoon vanilla extract
- 1 tablespoon orange zest
- 3/4 cup freshly squeezed orange juice.

Mary's White Fruit Cake

This is Mom's friend's family recipe - perfect for the holidays!
- 3/4 lb. butter; melted then cooled slightly
- 6 eggs, mixed by hand
- 1 lb. sugar
- 1 box golden raisins (15 oz.)
- 2 lbs. red candied cherries
- 2 lbs. green candied cherries
- 1 lb. pecans
- 1/2 lb. walnuts
- 1 bag coconut (14 oz.)
- 2 lbs. flour
- 2 1/2 tsp. cream of tartar
- 1 tsp. baking soda
- 1 cup apple juice (may need a little more)
- 4 oz. candied pineapple; chopped
- 3 tsp. vanilla

Preheat the oven to 350 degrees
- 3/4 cup (1 1/2 sticks unsalted) butter, softened
- 1 1/2 cups sugar
- 6 large eggs
- 1/4 cup fresh lemon juice
- 2 1/4 cups cake flour or all-purpose flour
- 1 1/4 tsp baking powder
- 1/2 tsp salt
- 1 tbsp grated lemon zest
- 3/4 cup cream cheese, softened
- confectioners' sugar (for dusting)
Creamy Black Cherry Salad Dressing

Combine the 4 oz each of arugula, romaine and radicchio
- 3 tablespoons black cherry jam or just regular cherry jam
- 2 tablespoons crumbled feta cheese
- 1 tablespoon shallot, chopped
- 1 tablespoon basil, chopped
- 2 teaspoons Blue Agave Nectar or 1 tablespoon sugar
- 1 1/2 tablespoons balsamic vinegar
- 1/2 teaspoon salt
- 5 tablespoons Extra Virgin Olive Oil
Creole Dressing

Combine all ingredients together in a jar with a tight-fitting lid
- 6 ounces tomato juice
- 3 tablespoons safflower oil
- 3 tablespoons cider vinegar
- 1 1/2 teaspoons grated onion
- 3/4 teaspoon crushed thyme leaves
- 1/2 teaspoon finely minced garlic
- 1/4 teaspoon hot red pepper sauce
- 1/2 cup chopped green pepper

Bring broth and clam juice to a simmer in a medium saucepan (do not boil)
- 2 cups fat-free, less-sodium chicken broth
- 1 8 oz. bottle clam juice
- 2 tsp. butter
- 1/4 cup chopped shallots
- 1/2 cup uncooked Arborio rice
- 1 tbsp. fresh lemon juice
- 1/2 cup grape tomatoes, halved
- 4 oz. medium shrimp, peeled and deveined
- 4 oz. bay scallops
- 2 tbsp. whipped cream

- 1 egg plus 1 egg yolk, well beaten
- 1/3 cup light cream
- 1/2 cup dried cherries
- 1 lemon, finely zested
- 1 egg white, slightly beaten
