- 1/4 cup extra-virgin olive oil
- 2 tablespoons dry white wine
- 2 cups all-purpose flour
- 1/4 cup sugar
- Pinch of salt
- 4 large egg yolks
- 4 tablespoons cold, unsalted butter, cut into small pieces
- 2 medium-firm, tart-sweet apples such as Staymans, Winesaps or Granny Smiths—peeled, cored and coarsely chopped (2 cups)
- 1 cup coarsely chopped walnuts
- 1/4 cup sugar
- 1/2 cup golden raisins
- 1/4 cup pine nuts
- 1 teaspoon cinnamon
- 2 tablespoons anisette or Sambuca
- 1 large egg, beaten
- Tip: MAKE AHEAD
- The uncooked, unrolled dough can be wrapped in plastic wrap and frozen for up to 1 month.
Spicy Irish Cheddar Corn Muffins

1. Preheat oven to 425F. Butter 12 standard muffin cups
- 1 1/4 cups yellow cornmeal
- 3/4 cup all-purpose flour
- 2 tablespoons sugar
- l teaspoon baking powder
- 1/2 teaspoon baking soda
- l teaspoon salt
- 1/2 teaspoon cayenne pepper
- 1 cup buttermilk
- 1 egg
- 6 tablespoons unsalted butter, melted
- 1 1/2 cups grated aged Irish Cheddar, divided
- l cup fresh corn kernels
Frozen Tiramisu Cake

Line a loaf pan that the pound cake fits in with overhanging plastic wrap
- One 1-pound frozen vanilla pound cake, thawed 10 minutes
- 3 tablespoons freshly ground espresso beans
- 6 tablespoons grated bittersweet chocolate
- 10 tablespoons coffee liqueur
- 2 cups coffee ice cream, slightly softened
- 1 cup chocolate ice cream, slightly softened
- 1 cup vanilla ice cream, slightly softened
Olive Garden House Dressing

Put ingredients into the bottle of dressing and shake well
- 8 ounces Paul Newman's Vinegar and Oil Dressing
- 1 clove garlic, peeled and minced
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 3 packages Sweet and Low (or 1 tablespoon sugar)
Hot Cocoa Mix

Put ingredients in processor - grind them
- 2 cups sugar
- 4 squares unsweetened chocolate(chopped)
- 1 1/4 th cups unsweetened cocoa powder
- 2 tbsp instant coffee
- 1/2 tsp cinnamon
Barbeque Chicken (Pulled Chicken)

Combine all the ingredients - except the chicken - in a slow cooker and whisk to combine
- 3 lbs. chicken breast, skinless and boneless
- 1 tbsp. granulated garlic
- 1 tbsp. smoked paprika
- 1 tbsp. granulated garlic
- 2 tsp. ground coriander
- 1 tsp. ground cumin
- 1/2 tsp. ground allspice
- 12 fl. oz. amber beer
- 1 - 14 oz. bottle of barbeque sauce
- 1 tbsp. Worcestershire sauce
- 1 tbsp. Dijon mustard
Dry Rub - Smoked Chicken

In a medium size bowl, mix together the dry ingredients
- 1 teaspoon salt
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon garlic salt
- 1 teaspoon black pepper
- 1 teaspoon crushed red pepper flakes
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 2 tablespoons brown sugar
- 1 whole chicken, halved
- Applewood chips for smoking, as needed
Slow Cooked Lamb Shanks in Red Wine with Garlic Mash

Preheat oven to 300F Heat a large frying pan with a little oil
- 4 lamb shanks
- 2 carrots-diced
- 1 large onion-diced
- 3 sticks celery-diced
- 4 cloves garlic-crushed
- 1 sprig of rosemary
- 1 sprig of thyme
- 1/2 bottle red wine
- 1 litre well flavoured chicken stock

- 2 large potatoes, grated

- 1 head cabbage, about 2 pounds, finely chopped

To make Cinnamon-Sugar Dough: In food processor, combine flour, 1 tablespoon sugar and salt
- 1 1/4 c. all-purpose flour
- 2 tbsp. sugar, divided
- 1/2 tsp. Kosher salt
- 1/2 c. cold unsalted butter, cut up (1 stick)
- 1 tbsp. distilled white vinegar
- 1 tbsp. ice-cold water, plus 1 to 2 teaspoon if necessary
- 1/4 tsp. ground cinnamon
- 3 tbsp. whipped cream cheese
- 1/2 c. finely chopped pecans
- 3 tbsp. sugar
- 1 tbsp. apricot preserves
- 1 egg, beaten
